How to Spice up Taco Tuesday with Three Healthy Recipes

Three All Veggie, Kid-Friendly Taco Fillings

After receiving our new Triceratacos, my kids have been begging for Tacos every night of the week. I have come up with three simple and easy recipes to keep your Taco nights fresh with ideas and full of veggies. Read what I thought of our new Triceratacos here.

Mixed Vegetable Tacos

This is a fantastic way of getting a wide variety of colourful veggies into your dinner. Simply grate a medley of vegetables and then pan-fry with typical taco seasonings. Make sure to get the kids involved from start to finish! Preparation time: 10 minutes Cook time: 15 minutes Serves: 6

Ingredients List:

  • 2 onions
  • 2 large zucchini
  • 2 large carrots
  • large handful of mushrooms
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp sweet paprika
  • ¼ tsp cinnamon
  • Salt and pepper to taste

Instructions:

Chop onion very finely and set aside. Grate the zucchini then squeeze with your hands over the sink to release as much moisture as possible. Grate the carrot and mushrooms and vegetables and set aside with the other veggies while you heat the oil in a large frying pan. Add in all the vegetables together and fry in the oil until the onions are softened, about 10 minutes. Add the garlic and fry until fragrant – a couple of minutes. Then add in the spices and cook a few minutes more until the mixture is fragrant and any excess liquid has cooked off. Serve with other taco toppings: grated cheese, guacamole and sour cream.

Black Bean and Corn Salad Recipe

This salad is fresh and zingy from the lime juice in the dressing. Add in finely chopped tomatoes and their juice for more of a salsa consistency. Preparation time: 10 minutes

Ingredients List:

  • ½ cup frozen or fresh corn kernels
  • 1 can of drained black beans
  • 2 finely chopped spring onions
  • 1 diced red capsicum
  • 1 Tbsp coriander, finely chopped
  • Juice of 1 lime
  • 1 Tbsp olive oil
  • salt and pepper to taste

Instructions:

Mix everything together in a bowl and set aside at room temperature until ready to serve with the tacos.

Easy Kid’s Guacamole

This guacamole is made simply with mashed ripe avocado, lime juice and sea salt. Simplistic perfection! Preparation time: 5 minutes

Ingredients List:

  • 2 ripe avocados
  • Juice of 1 lime
  • ½ teaspoon sea salt flakes

Instructions:

Cut and de-seed the avocados, then place the flesh in a bowl and mash. I used my handy Avo-Shark! The kid's loved getting involved when the Avo Shark comes out. Mix through the lime juice and the the sea-salt, then set aside until ready to serve with the tacos.
