The Easiest and Best Brownies Yet: Donna Hay’s Salted Caramel Molten Chocolate Brownies

I am definitely not a baker and there is a good reason why my baked goods can be a real flop – I hate exact measurements. This is why I love this brownie recipe by Donna Hay, it is fool proof and decadently delicious as she promises on her new show Basics to Brilliance. All you need for this recipe aside from the ingredients listed below are; mixing bowl, measuring cups, cooking spoon and baking tin. It doesn’t get more simple than this.

Ingredients:

  • 1 cup (150g) plain (all-purpose) flour
  • ¾ cup (75g) cocoa
  • ¾ cup (130g) brown sugar
  • 1 1/3 cups (290g) caster (superfine) sugar
  • 175g unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 125g dark chocolate, chopped
  • 140g store bought vanilla fudge, chopped
  • Pinch of Himalayan salt flakes

Instructions:

  1. Place the flour, cocoa, both the sugars, the butter, vanilla and eggs in a large bowl. Mix until smooth.
  2. Break up and add the chocolate and fudge before stirring to combine.

  1. Preheat oven to 160°C (325°F).
  2. Lightly grease and line a 20cm square tin with non-stick baking paper.
  3. Spread the mixture into the tin.
  4. Bake for 50 minutes – 1 hour or until the brownie is set.
  5. Allow to cool in the tin for 5 minutes before slicing into squares and serving warm, or allow to cool completely in the tin.

Makes 16 generous brownies. We recommend serving with vanilla ice cream and strawberries for the perfect dessert.
