Tips for Prepping Your Waffles The Day Before
As with any kind of cooking, making waffles requires preparation. Fortunately, with waffles, you can always combine dry ingredients beforehand and store them in a zipper top bag or plastic container. That way, in the morning, all you have to do is add the wet ingredients and mix the batter.
Let’s start off with two delicious savoury waffle recipes.
Parmesan and Parsley Savoury Waffles
Looking for waffles with a bit of elegance? This recipe combines the subtle but delicious flavours of real Parmesan cheese and fresh parsley. It’s an unexpected flavour combination that’s sure to make kids and adults alike take a moment to sit and enjoy a great meal. Ingredients:
- 2 cups self-raising flour
- 1 teaspoon sea salt flakes
- 1 teaspoon freshly ground pepper
- 1 ½ cups milk
- ¾ cup freshly grated Parmesan cheese
- 2 egg yolks
- 4 egg whites
- 100g butter, melted
- Large handful fresh continental parsley, finely chopped
Instructions:
Start off by preheating your waffle iron.
Sift together the flour, salt, and pepper in a large bowl.
In a smaller bowl, mix together milk, Parmesan, and yolks until well combined. Add to the flour and gently stir to combine. Then add the melted butter to the flour mixture and gently stir till combined.
In a separate bowl, beat the egg whites until stiff peaks form (or use a standing mixer if you have one), then add to the flour and butter mixture with the parsley, and gently fold through with a spatula until just combined. You want to ensure that you keep as much air in the egg whites as possible.
Pour portions of the batter into your waffle maker as per the machine's size and instructions.
Crunchy Cornmeal Waffles
This recipe may look a bit too complicated for a Thursday evening, but most of the preparation can be done ahead of time. If you need a hearty and flavourful breakfast, you can have these waffles mostly ready before you even start heating up the waffle iron. This recipe is from King Arthur Flour.
Ingredients:
- 1 ¾ cups buttermilk
- 2 eggs
- 5 tablespoons butter, melted and cooled (or 1/3 cup vegetable oil)
- 1 ½ cups unbleached all-purpose flour
- 1 cup yellow cornmeal
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt
Optional:
- 2 tablespoons minced fresh chives (or 3 tablespoons of dry chives)
- 2 to 3 teaspoons ground cumin
- 1 teaspoon ground chipotle pepper (or 1/4 teaspoon hot pepper sauce)
- 3 tablespoons dried tomato or bell pepper flakes
Instructions:
In a medium-sized mixing bowl, whisk together the buttermilk, eggs and melted butter or oil.
In a separate bowl, blend together the dry ingredients, then quickly and gently combine the wet and dry ingredients.
Let the batter sit for 10 minutes to allow the cornmeal to soften.
Bake the batter in your waffle iron according to its instructions.

The Classic Belgian Waffle Recipe
Savoury waffles are delicious, there’s no doubt there. But there’s plenty to be said for the simple, traditional waffles most of us grew up with. This recipe is an absolute classic and could hardly get simpler. If you combine your dry ingredients ahead of time, you can have these waffles ready for the waffle iron in about 5 minutes. Ingredients:
- 2 cups flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- ¼ cup sugar
- 2 eggs, separated
- ½ cup oil
- 2 cups milk
Instructions:
In a large bowl, sift the dry ingredients together.
Separate the eggs and beat the egg whites in a small bowl until stiff (you can use a mixer if you have one).
Mix together the egg yolks, milk, and oil and gently stir.
Add to dry ingredients and mix well.
Fold in the beaten egg whites.
Cook the mixture in your waffle iron according to its instructions.
Decadent Dark Chocolate Waffles with Strawberries
If you’ve got a real craving for something sweet, this waffle recipe is sure to satisfy (and then some). Some days, you know you’re just going to need it, so why not treat yourself? This recipe comes from Australia’s own delicious.com.au.
Ingredients:
- 200g of dark chocolate
- 25g of copha or other shortening
- ¾ cup of thickened cream, lightly whipped
- 2 cups of self-raising flour
- 1 teaspoon bicarbonate of soda
- 1 tablespoon cocoa powder
- 3 tablespoons caster sugar
- 2 eggs, separated
- 1 ½ cups milk
- 90g of melted unsalted butter
- 150g of hulled and halved strawberries
Instructions:
Roughly chop three-quarters of the chocolate and place it in a pan with the copha. Stir the mixture over low heat until both have melted and mixture is smooth, then set aside.
Finely chop the remaining chocolate, stir in the cream, and chill until ready to serve.
Sift the flour, soda, and cocoa into a bowl and stir in sugar. Whisk in egg yolks, milk and butter until smooth.
In another bowl, beat the egg whites with a pinch of salt until soft peaks form (you can use a mixer if you have one), then use a metal spoon to carefully fold whites into batter.
Make the waffles according to your waffle iron’s instructions
Serve the waffles with chocolate chip cream, chocolate sauce and strawberries.
