Staub Honeycomb Braiser Review

I have been dreaming to own a black Staub pan after I noticed beautiful photos and videos from top bloggers around the world featuring these classic and elegant pans. I can see why they love them - the enamelled matte black looks clean, neutral and perfectly frames any type of food cooked or served in the pans. And the robustness of French-made Staub cookware is evident in any food photo: before you even touch, you can tell this is an extremely well-made product. The Honeycomb Braiser that I have is made of durable cast iron. This material has been used for centuries and is well known for its excellent temperature retention and cooking performance. Some people may find cast iron challenging due to the ongoing care required, specifically needing to ‘season’ the pans. Staub has made cast iron incredibly user-friendly by coating the raw cast iron in several layers of hard wearing enamel. The braiser has a raised honeycomb pattern on the inside of the pan, which allows for fast heat distribution and aids in the natural non-stick properties of the cooking surface. The inside of the lid features bumps which retain moisture during oven cooking by maintaining the steam and then returning it back into the food. I experienced this while braising the brisket in the recipe below – the meat stayed perfectly moist throughout the duration of the 3 hours cooking time and didn’t lose too much liquid through evaporation. The braiser is oven safe to 500F and works on all hobs, including induction. I find the size of the pan also makes it a perfect all-rounder in the kitchen. At 24cm, its fairly small in diameter, yet deep in the base. So the pan can easily braise 1kg of brisket, as per my recipe below, but it can also poach eggs or become a beautiful serving dish for some vegetables without being too bulky on the table.

Clean Up

The instructions say that the pan is dishwasher safe, however I found that the natural non-stick properties and honeycomb design mean that food easily lifts with water and a scrub brush.
