My plan was to make a cake for a friend’s birthday and I knew a triple layered chocolate cake filled with chocolate buttercream would do the job!
I used a 23cm round tin for the cake which is smaller than the ring but it didn’t matter much as long as I made sure I pressed one side against the cake to keep it still. Of course if I used a 26cm tin or bigger, it would have been even easier. I wanted three layers from my cake so chose the three places I was going to cut from.
Whilst cutting I rotated the ring to get through the whole cake. If you stop half way through cutting, don’t worry; you can easily pick up where you left off with the help of the ring.
After my first layer was cut, I slid it onto the cake lifter which helped me lay it on my cake stand gently (see Crow Canyon for this cake stand).
I repeated this 3 times, each time using the spatula to spread a generous amount of buttercream.
Unfortunately for the birthday boy, I couldn’t resist cutting into the cake. I had to see how it came out… and it was so worth it! Each layer was well defined and the creamy chocolatey filling was sandwiched between moist rich cake, making it heavenly.
The guilt only kicked in half way through the cake when I realised I had no cake to take to the birthday party now! Oops.
