A Vegan-Friendly Version of the Classic Banana Bread

We all love a good classic banana bread to combat those hunger pangs. Banana bread is one of the easiest bread recipes to make and it is absolutely perfect for breakfast or an afternoon snack. It can be enjoyed on its own or toasted with a spread of butter or jam. This Vegan and Refined Sugar-Free Banana Bread is a much healthier version of the classic banana loaf for guilt-free indulgence.

This recipe uses dates as an alternative to refined sugar to give that natural sweetness on top of the ripe bananas. To make this banana bread a vegan-friendly option, dairy milk has been swapped out for oat milk, resulting in a loaf of perfectly moist banana bread. Bake it on the weekend and store it in a Pyrex Cook & Freeze container so you can enjoy this lovely vegan banana bread throughout the week.

Vegan and Refined Sugar-Free Banana Bread Recipe:

Serves: 6 people | Total Time Required: 45 minutes

Ingredients:

  • 190ml oat milk
  • 1 tsp baking powder
  • 1 tsp bicarbonate soda
  • 2 ripe bananas, mashed
  • 200g spelt flour
  • 100g Deglet dates, chopped
  • 35g walnuts, crushed
  • 1 tsp salt
  • 1 tbsp vanilla extract
  • ½ cinnamon powder

Method:

  1. Preheat oven to 170°C.
  2. First, add your dry ingredients (flour, salt, baking powder, bicarbonate soda and cinnamon powder) into a Pyrex® bowl and stir to remove any lumps.
  3. In a separate Pyrex® bowl, add the mashed bananas (it’s good if they’re slightly chunky too). Add the vanilla extract and mix well.
  4. Pour the dry ingredients to the banana mixture and fold it in. Next, add oat milk and stir slowly. Make sure you scrape down the sides of the bowl.
  5. Once the mixture is smooth, add the crushed walnuts and chopped dates, fold them together.
  6. In a baking tin, rub a small amount of plant-based butter or coconut oil on the inside of the tin to prevent the banana bread from sticking. Line the tin with a sheet of wax paper and pour in your mixture. Top it off with some sliced bananas, chopped walnuts or dates and place in the hot oven for 35 minutes.
  7. Bake until golden brown and the inside is cooked through. A great tip for checking is by placing a knife or fork through the centre’s top and when you remove it, it should be clean with nothing stuck to it - that’s when you know it’s cooked perfectly.
  8. Remove from heat and allow to cool slightly before serving. Add a small dab of butter or jam to taste.
