The famous Pound cake - moist, sweet and delicious. But have you ever wondered where the name came from? Traditionally these cakes were made with a pound of each of four main ingredients: flour, butter, eggs and sugar thus appropriately being named Pound Cake. History of these cakes date back to the 1700s and is argued to have originated in France where it's commonly known as Quatre-quarts or Four Pounds translated. Popular for serving at high teas or when entertaining, pound cakes are rich, most, and simple to make. They are also great to experiment with by adding your own ingredients to give it your own personal touch such as shaved almonds, icing, or if you're adventurous homemade caramel sauce - the list is endless! The recipe below is a simple yet mouthwatering Vanilla Pound cake that is perfect to serve with tea and coffee on a lazy Sunday afternoon with friends. Vanilla Pound Cake

Ingredients

2 cups sugar 1 cup butter 5 eggs 2 tsp vanilla 3 cups self-raising flour 1 cup milk (236ml)

Method

Preheat the oven to 170°c (fan) Mix the butter and sugar with a mixer until light and creamy. Add eggs and vanilla essence and continue mixing for about 5min until light and airy.
