Vanilla & Orange Madeleines with Chicago Metallic

The Chicago Metallic bakeware is designed with both professionals and home cooks in mind. Their products are durable, have superior baking characteristics and are great for heat retention. The non-stick surface allows you to easily release your baked goods making your products visually more appealing and the clean up effortless. The Madeleine Pan contains 12 shell-shaped moulds, turning out beautiful and elegant French Madeleines every time. I had never made madeleines before and so I used the recipe that came with the pan, making only slight alterations. The vanilla and orange madeleines not only looked pretty but also tasted delicious. They were light and airy yet crisp, just like they should be. I rarely bake sweet goods, like these, but do like to occasionally make them to give as gifts or to make for events. I know that I will return to this pan time after time to do this. It turns out such pretty little cakes, perfect for tea parties and gifts. There are so many delicious sounding madeleine recipes on the web and I will certainly be experimenting more. I love the simple look of a sprinkling of icing sugar but also love them dipped in chocolate or coated with a light glaze. I’m constantly experimenting and thinking of untraditional ways to use kitchen products. I love to encourage healthy eating by making it fun for kids. I think this tray would make gorgeous and fun frozen treats. You could easily fill the tray with a favourite smoothie recipe and then add a stick to make fun mini ice lollies for babies and younger kids. I also plan to use this pan to make savoury madeleines; the delicious combinations are endless. This pan has a 25-year warranty, covering the pan for any defects in material and workmanship during normal use. The pan is dishwasher safe however, hand washing is recommended to extend product life. Usually, a soft sponge or kitchen brush will remove any baked on particles. Scouring pads and abrasives cleaners should be avoided. Also, sharp-edged utensils and knives should not be used on this product. Vanilla and Orange Madeleines (Makes 24)

Ingredients
  • 120g (2/3 cup) flour
  • ¼ tsp baking powder
  • 100g (1/2 cup) butter, melted and cooled
  • 2 eggs
  • ½ tsp Vanilla Extract
  • ½ tsp Orange zest
  • 145g (1 cup) Icing Sugar
Method Preheat oven to 175C and spray your Chicago metallic Madeleine pan with oil Sift together flour and baking powder in a small bowl and set aside In a separate bowl, use an electric mixer to beat together the eggs, vanilla and orange zest. Beat on high speed for 5 mins. Gradually beat in the icing sugar and beat for a further 5 mins or until thick. Gently fold in the flour mixture and then the melted butter. Mix until smooth. Spoon the mixture into the molds approx. ¾ full (as seen below) Bake for approx. 8 minutes, or until edges are light brown. Allow to cool for 2 mins and then loosen the cookies and allow to fully cool on a rack. Once cool sprinkle with icing sugar.
