The Ultimate Roast Cauliflower Recipe with the Scanpan Evolution Roaster

This roasting pan by Scanpan is a perfect size for cooking large family style casseroles, roasting joints of meat or crisping vegetables. Very sturdy and durable, the tray is has a patented ceramic titanium (environmentally friendly) non-stick surface that will not scratch or wear down easily and allows for any utensil use.

My favourite aspect of the tray is that it holds a whopping 7 Litres volume. This makes cooking family meals easy, and allows me to cook in bigger batches so that I can save time. The tray is perfect for use at Christmas time when extra guests are there for dinner. It is also available in small and medium sizes. Don’t forget to measure your oven to check it can fit!

Cauliflower cheese is a winner with nearly everyone. It is comfort food at its finest, yet is not as heavy as starchy potatoes. My Ultimate Cauliflower Cheese recipe is pretty classic, because I believe this is one of those dishes that shouldn’t be messed around with too much. As this roasting tray makes a lot of cauliflower cheese, try freezing some for future dinners, or making another recipe out of the leftovers, such as a Creamy Cauliflower soup.

The Ultimate Cauliflower Cheese

Tender cauliflower florets coated in a velvety rich cheesy sauce with lots of flavour. Serves: 8-10 Prep time: 15 minutes Cooking time: 1 hour

Ingredients:

  • 2 large heads cauliflower
  • 4 Tbsp butter
  • ½ cup flour
  • 4 cups whole milk, warmed
  • 1/8 tsp grated nutmeg
  • 1 tbsp Dijon mustard
  • 2 cups grated cheese blend (see notes) + extra for topping
  • salt and pepper

Instructions:

Heat the oven to 180C/350F.

Break the cauliflower into florets and place them into a large roasting tray.

Melt the butter in a medium sized pot then add the flour. Stirring all the while, add the milk slowly, one cup full at a time. Cook for a few minutes until thickened.

Add the mustard, nutmeg, and cheese and stir until the cheese is all melted. Season well with salt and pepper.

Pour the sauce all over the cauliflower and then top with extra cheese.

Bake for 1 hour or until bubbling and browned on top.

Serve immediately.

Notes:
  • To make this recipe gluten free, simply swop the flour for arrowroot powder.
  • Cheese Blend: Any cheese of choice may be used, however, a great cheese blend would contain a good melting cheese, such as Gruyere or Swiss along with Cheddar, Tasty or Colby and some Parmesan for flavour. Use equal parts of each cheese.
