Bake Bread Without Yeast at Home

There's nothing quite like enjoying a fresh loaf of bread that you baked yourself. Not only does it envelop your house in a wonderful scent but you are in charge of the ingredients. Some may find the process of baking bread to be intimidating because of the kneading and proofing involved. The following recipes that we have compiled allows you to bake your own yeast free bread at home! It's easy to make, fills up your time and best of all, you get something delicious out of it after!

1. Easy Roll Recipe

  • Butter, for greasing muffin tins
  • 2 cups self-rising flour
  • 1 cup milk
  • 2 tablespoons sugar
  • 4 heaping tablespoons mayonnaise
Method:
  1. Preheat the oven to 350 degrees F (approximately 177 degrees Celsius).
  2. Lightly grease a 12-cup muffin tin with butter.
  3. In a large mixing bowl, combine flour and milk, blending with a rubber spatula. Add the sugar and mayonnaise, and stir until just combined. Spoon batter into prepared muffin tin. Bake for 12 to 15 minutes, or until golden brown.

2. Irish Soda Bread

  • 2 cups / 300g white flour (plain / all-purpose)
  • 1.75 cups / 265g wholemeal flour (wholewheat)
  • 2 - 3 tbsp extra flour (either flour, for dusting)
  • 1.5 tsp baking soda (bi-carb)
  • 1.5 tsp salt
  • 2 cups (500ml) buttermilk, fridge cold
Note/Tip:
  • Flour – white flour makes a slightly more tender crumb whereas wholewheat/wholemeal adds flavour. So using both is best – but it can be made with just either flour.
  • Baking Soda – This is baking powder on steroids, with almost 3 times as much rising power. Because this is a formidable ball of dough we’re working with here, we need the super strength of baking soda instead of baking powder!
  • Buttermilk – The vinegar in buttermilk activates the baking soda, giving it a kickstart which you need for a loaf of bread this size. Easy alternative: Just mix milk and lemon juice or vinegar, leave to curdle and use per recipe.
  • Salt – the only seasoning required! See below for more flavouring options
Method:
  1. Preheat oven to 220C/430F (200C/390F fan).
  2. Line tray with baking paper.
  3. Whisk both flours (not extra flour), baking soda and salt in a mixing bowl.
  4. Add buttermilk, stir until it's too hard to stir anymore.
  5. Sprinkle 2 tbsp of the extra flour onto the work surface, scrape out dough, sprinkle with more flour.
  6. Gently knead no more than 8 times, bring together into a ball. (Note 4)
  7. Transfer to tray, pat into 2.5cm/1" thick disc.
  8. Cut cross on surface 1cm / 0.3" deep using serrated knife.
  9. Bake 20 minutes. Turn oven down to 200C/390F (180C/350F fan).
  10. Bake further 20 minutes, or until the base sounds hollow when tapped in the middle.
  11. Transfer to rack and cool for at least 30 minutes before slicing.
Note: Once you add the buttermilk, aim to get it into the oven within 3 minutes. Buttermilk activates the baking soda so it'll start to fizz and begin its process. If it's laid outside too long, the dough becomes dense hence, losing its firepower Recipe source: Recipe Tin Eats

3. Yeast Free Easy Cinnamon Bread

  • 2 1/2 cups / 375g plain flour (all-purpose flour)
  • 1 cup / 220g white sugar
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
Wet Ingredients:
  • 3 eggs
  • 1/2 cup / 125 ml vegetable oil
  • 1 1/3 cups / 290g sour cream (Note 1)
  • 2 tsp vanilla extract
Cinnamon Sugar:
  • 60g / 4 tbsp unsalted butter, melted
  • 1 1/2 tbsp cinnamon powder
  • 3/4 cup / 165 g brown sugar, packed
Method:
  1. Preheat oven to 180C/350F (all oven types).
  2. Grease a loaf tin approximately 21cm x 11cm / 8" x 4" and line with baking paper, leaving an overhang.
  3. Place Dry Ingredients in a bowl and whisk to combine.
  4. Place Wet Ingredients in a separate bowl and whisk until combined.
  5. Place Cinnamon Sugar ingredients in a bowl and mix to combine (it should be like a slurry).
  6. Make a well in the Dry Ingredients bowl. Pour in Wet Ingredients, then mix 12 - 15 times until just combined (few lumps are ok).
  7. Spoon about 1/4 of the batter into the tin (about 1.5cm / 3/5" deep) and smooth surface.
  8. Dollop about 1/3 of the Cinnamon Sugar over the batter.
  9. Top with half the remaining batter. Dollop the remaining Cinnamon Sugar over the batter. Drag a butter knife back and forth (lengthwise and cross to make the swirls. Top with the remaining batter - dollop it on, the more the Cinnamon Sugar is moved about, the more swirls!
  10. Bake uncovered for 45 minutes. Then remove and cover with foil, and bake for a further 20 minutes or until a skewer inserted into the middle comes out clean.
  11. Stand in the tin for 5 minutes before lifting it out onto a cooling rack. Allow to cool before slicing (can still be warm but don't slice while hot, may crumble). Moist and flavoursome enough to eat plain but a little extra butter doesn't hurt!

4. Super Easy 3 Ingredient Flatbreads

  • 1.5 cups natural yoghurt
  • 2 tbsps olive oil
  • 2.5 cups self-raising flour
Method:
  1. Combine all the ingredients in a large bowl and mix either by hand or with a mixer until an elastic dough forms.
  2. Divide the dough into 16 pieces, then roll each out into a circle around 0.5m thick.
  3. Heat a frypan over medium/ high heat.
  4. Sling the flatbread onto the frypan surface.
  5. Cook until bubbles rise.
  6. Flip, cook until golden.
  7. Repeat until they are all done.

5. Yeast Free Honey Wheat Bread

  • 3 cups whole wheat flour (approximately 468 grams)
  • 2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups buttermilk or sour milk
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 tablespoon sunflower seeds (optional, to sprinkle over the top.)
Method:
  1. Preheat oven to 300℉ (150ºC).
  2. Spray 9" x 5" (2L) loaf pan with non-stick spray.
  3. In a very large mixing bowl, whisk together the whole wheat flour, baking soda and salt. Set aside.
  4. In a medium bowl, whisk buttermilk, honey and oil together.
  5. Combine this mixture to the dry ingredients and mix only until combined with a wooden spoon.
  6. Place batter in a pan.
  7. If using, sprinkle top with sunflower seeds.
  8. Bake for approximately 55 minutes or until done.
  9. Remove from oven and let cool on a wire rack for about 10 minutes before removing bread from pan. Cool completely before slicing.
