Guilt-Free and Crispy Baked Sweet Potato Chips

I may have a lot of skills on my resume but “able to cut things uniformly with a knife” is not one of them. I surely can’t be the only one who buys a freshly baked bread loaf whole only to get it home and end up with a sandwich that has one super thin slice and the other as thick as a book. It’s the worst!

Nothing has demonstrated my lack of knife skills more than trying to make homemade chips. I've tried in vain for years to cut matching thin slices so my chips would cook evenly and crisp up perfectly. Well, that was until I got my Progressive Professional Mandolin.

In a matter of seconds I had an entire sweet potato sliced into the most perfectly thin rounds and made a batch of deliciously crisp chips!

I’ve always heard scary things about cutting with a mandolin but the hand safety guard took any worries away and made the experience a breeze. The mandolin has quickly become one of my most used kitchen accessories. I’ve thinly sliced cabbage for coleslaw, cut potatoes into fries with ease and julienned carrots for a stir fry.

But if you ask me, it was worth getting just for the sweet potato chips! A packet of sweet potato chips from the store can cost an arm and a leg but they’re cheap and easy to make at home (especially if you have a mandolin). Let me show you…

Baked Sweet Potato Chips Recipe

Ingredients:

  • 1 Sweet Potato
  • Spray Olive Oil or Olive Oil
  • Salt, to taste

Instructions:

  1. Preheat the oven to 180C and line two baking sheets with foil.
  2. Slice sweet potato into uniform thin slices using the thinnest setting on your mandolin.
  3. Arrange sweet potato chips in a single layer (not touching) on each baking tray and either spritz with spray oil or brush olive oil over both sides of each chip.
  4. Bake for 10 minutes, flip the chips over, and bake for another 10 minutes or until golden.
  5. Remove from the oven. You’ll find the chips aren’t 100% crispy yet, but simply leave them in their trays for 5 minutes to allow them to crisp up further. If you find after this time that some are still soft pop them back into the oven for a few more minutes.
  6. Sprinkle with salt and serve immediately.
