Maple Bacon Sweet Potato Bake with Borner V Slicer

If you love potato bake then there is something I have to share. It’s even better with sweet potatoes. The reason behind this is it looks even more amazing and tastes even yummier. This twist on the normal potato bake that everyone has had growing up is easy to make and looks a lot trickier than it is. Why are the potatoes standing up? Well, they make the potato bake look a lot more interesting! Why do the same old same old when you can mix it up? I’ve used my Borner V-slicer to take the pain out all the slicing and get this done in half the time it would normally take. Just be careful, and don’t let the kids get involved in this step! Potato bake is a family favourite and has always please both my kids, it’s the potato-ey yumminess and the creaminess. I have to admit, the bacon might have something to do with it too! The sweetness of the maple syrup in this one might also be a key convincer, but it works so well with the bacon and the sweet potato that you just have to try it! The crunchy potatoes on the top edge are going to be positively delicious, so when you’re serving it…make sure to steal a little slice or two as compensation for your (not-so) hard work. When you are choosing sweet potatoes for this, don’t go with massive ones as their slices will be super tall and you’ll have to halve them. You are much better off going for medium size ones. If you want the potatoes to truly shine in a potato bake dish, it’s super important to not overload the top. If you prefer more of a classic potato bake, you might be better off layering it and topping with cheese, because this variation is all about being show-stopping without heaps of extra effort. This is the perfect dish to take when going to someone’s house for a family event as you can cook it up to the point where the cream goes in, refrigerate and then pop back in the oven when you get there with the cream. The recipe as it stands does a serving for a family of four, but it is easily doubled. Maple Bacon Sweet Potato Bake with Borner V-Slicer

Recipe:
  • 600g sweet potato (I used a Borner V-slicer and sliced them to 3mm, but you could use a knife and some skills or even your food processor, if you end up with potato slices thicker than these then you will need to add 5-10 minutes to the cooking time)
  • 2 tsps dried oregano
  • 150ml cream
  • 2 rashers bacon, diced
  • 1 tbsp maple syrup
  • 2 tbsp olive oil
Method: Preheat the oven to 200 degrees. Combine the bacon maple syrup, olive oil and oregano in a bowl. Using your hands, mix the potato slices through it, ensuring they are all coated. In your baking dish, start stacking the potato slices ensuring they have bits of the bacon mixture between them. Stack them tightly, because otherwise, they will shrink when cooked and there will be gaps. Sprinkle any remaining mix on top. Cover the dish with foil and bake for 40 minutes at 200 degrees. Remove the foil and add the cream. Pouring evenly over the top. Bake for 25 more minutes uncovered. Test the potatoes with a fork, they should be cooked through, but if they were thicker than 3mm they may not be, so cook for 5-10 minutes more, checking again with a fork. Clean up the dish (it will bubble up at the sides) and serve!
