Cloud Eggs
We all like our eggs cooked a certain way; boiled, fried, scrambled or poached. Now there’s a new egg in town, the cloudy egg! The egg white is whisked like a meringue and is the cloud of the dish. It is then topped with the egg yolk, baked and served. And if this dish isn’t fun enough, try adding some colour to the cloud! They take minutes to make and are a big hit with the both the adults and kids. A great carb free way to have breakfast to keep you feeling as light as a cloud - excuse the pun! :-) To make these eggs extra fluffy I used the Cuisinart Stand MixerHow to Make Cloud Eggs
Ingredients
1 egg. Natural food colouring (optional)Method
Preheat the oven to 210 degrees. Split the egg white and yolk. Whisk the egg whites until it becomes stiff (I used Cuisinart Mixer to do the job) – it will end up looking like a meringue.

Using a spoon, place the cloud on a baking sheet, and create a dip in the middle for the yolk to sit. (To give the cloud a bit of colour, I used was a tiny drop of food colouring and mixed it through).
Bake in the oven for 2-3min until it starts to brown.
Remove from the oven and drop the egg yolk into the middle of the cloud. Bake for a further minute or until yolk is done the way you like it.
Serve with your own healthy additions! I served it on a bed of lettuce and home made cheese bread. You can also add fresh herbs and cheese to add more flavour.
