Garlic and Chorizo Prawns Recipe

This saucy chorizo and prawns dish is the perfect starter to accompany your main course meal

This stress-free chorizo and prawns starter has it all! The sauce is the perfect balance of savoury and sweet, and the chorizo and prawns are a perfect match. Bring this dish together in just 10 minutes. It pairs wonderfully well with crusty bread.

Time: 10 minutes | Serves: 6

Ingredients:

  • 2 banana shallots, finely chopped
  • 300g chorizo, sliced thickly
  • 2 cloves garlic, sliced thinly lengthwise
  • 200g fresh or frozen prawns
  • 1/2 cup of good quality Spanish sherry, such as Pedro Ximenez
  • Juice of ½ lemon
  • ½ cup flat-leaf parsley, chopped

Instructions:

1. In a large skillet or frying pan, add the olive oil and bring to medium heat. Add in ½ of the shallots, reserving the rest for garnish. Cook for 2 minutes until softened.

2. Add the sliced chorizo and let colour on one side. Flip and leave to cook on the other side. Stir shallots as necessary. 3.. Add the garlic slices to the pan, around the shallots and chorizo. Stir everything a few times and let cook for 2 minutes until the garlic softens.

4. Add the prawns to the pan and cook for 2 minutes on each side until opaque.

5. Just before serving, pour in the sherry and bring the dish to a boil. 6. Take off the heat and squeeze over the lemon. Sprinkle over the chopped parsley and fresh shallot. Serve with crusty bread.
