English Roast Beef Dinner Recipe

A step-by-step on how to cook that perfect roast dinner!

Treat dinner guests to the perfect, elegant dinner dish: English Roast Beef. This recipe boasts a melt-in-the-mouth fillet of beef with a rich glaze. The glaze is just the right amount of sweet and savoury and compliments this cut of beef perfectly. For the perfect English roast, serve with creamed horseradish and Yorkshire Puddings.

Roast beef cooking time: 1 hour, plus marinating time | Serves: 5

Ingredients:

  • 1kg rolled beef fillet
  • 2 tbsp dijon mustard
  • 2 tbsp olive oil
  • 1 tsp black pepper, cracked
  • 1 ½ tsp salt
  • 2 shallots
  • 3 tbsp butter

For the Marinade/Glaze:

  • 1 cup red wine
  • 1 cup port
  • 3 tbsp Worcestershire Sauce

Instructions:

1. 30 minutes before or up to overnight, place the rolled beef in a food storage bag or dish and pour over the marinade.

2. When ready to cook, pat dry all over with a towel (reserve marinade). Then, rub oil, salt, and pepper all over. Brush over the Dijon on all sides.

3. On medium-high heat, heat a large roasting pan and sear the beef on each side until medium brown and caramelised.

4. Take the beef out and set it aside. Add the shallots with a tsp more oil and let them lightly soften. Add the remaining marinade to the pan, along with 3 tbsp butter and stir, scraping the pan where the beef caramelised.

5. Add the beef back to the pan. 6. Carefully add the pan to 220C oven in the centre rack, for 10 minutes. Carefully turn the beef over, then cook for another 10 minutes.

7. The roast beef is done when the internal temperature reaches 54 degrees C (medium rare suggested) 8. Remove from oven, and rest for 15 minutes. Slice thick.
