Benefits of Baking with the Mason Cash Terracotta Baking Stone

I’ve always wanted to use a baking stone so I was keen to try out the Mason Cash Terracotta Baking Stone. ‌Mason Cash & Co were established in the 1800s and I’m sure you all have a Mason Cash mixing bowl stashed away in the cupboard. I now have 2 bowls in my pot drawer. The baking stone is made from high quality, chip-resistant earthenware which will not only draw moisture from the dough but also crisp pizza bases, flatbreads and bread. However, terracotta is porous and the baking stone must be seasoned prior to use. You’ll need to wash the stone in soapy water and then soak it in warm water for 30 minutes before allowing the stone to completely dry. As I used baking paper I haven’t done the next step which is to coat the baking stone in oil and heat in the oven. The baking stone is oven safe for both convection and conventional ovens but you do have to use a little care. Avoid using it directly on the cooktop, under a grill or in a microwave. The baking stone is very hot once it comes out of the oven, so place the stone directly onto work surfaces or tabletops. It is not dishwasher safe, so it must be cooled before placing into cold water and it must also be hand washed.
