RetroKitchen has taken the time to provide us with the perfect recipe for a lemon meringue pie – in a dish!
This recipe is full proof, and will make a stand out dessert each time, that’s sweet and delicious!
I bought pre-made short crust pastry and layered it on the dish.
Note: make sure you keep the box or write down the recipe that is on the dish because the moment you lay the pastry down, the recipe is hidden!
By poking the holes in the pastry, it prevents it from puffing up during baking. While that was in the oven, I prepared the lemon layer and the meringue.
The lemon layer you’ll notice gets very thick and viscous, whilst the meringue layer becomes very fluffy and creamy.
Once everything was ready, I began putting the pie together.
Once it fully baked, make sure you let it cool fully to let the lemon layer solidify otherwise you won't be able to cut the lemon pie into neat slices. You can see in the picture below that RetroKitchen knew what they were doing when they added this recipe to their dish!
Constructed from high fired porcelain, the dish is durable and can be used for more than just this pie. It is obviously oven safe but also microwave and dishwasher safe so don’t worry about cleaning it up after - leave that for your dishwasher.
