Evercut Furtif: Knives which “never need sharpening”
TB Groupe, the French makers of these

I’ve had my Evercut chef’s knife and the 11cm utility knife for a few months now, so our relationship is young (relationship with knives? You betcha. Getting to know one another is a must!). But so far, I am enjoying every single time I use these dark and handsome instruments. I must admit being a little scared of using them at first, as I was first using the a

Wusthof. Using a new knife takes some getting used to, like driving a new car or using a new tennis racket. But these knives do feel every bit as good as they look. TB Group obviously took every aspect of these knives into extreme consideration during the 5 years of research and development: the weight of the knife, the width of the handle, the geometric angles for added grip texture (not just for looks!)
So just how do they stay sharp for 25 years? Firstly, it is worth noting that the knives are made from 5 generations of knife makers in the area of France known for the craft of knife making. Something to be said for that! The blades are made internally with steel, but laser bonded and reinforced with a titanium carbide coating, hence the striking black look and the French word ‘Furtif’ meaning
stealth. They were actually inspired by the French Rafale stealth fighter jets for their shape and matte black design. The internal steel means that the knives are tough and less brittle than
ceramic knives. TB Group says that the knives will last 300 times longer than standard steel, and 5 times longer than its ceramic counterparts.
My own test of the sharpness of a knife is usually in 3 easy ways:
1. Slicing through cooked meat such as steak
2. Cutting straight down on a tomato
3. Taking the skin from fish

The
chef’s knife has been used in all sorts of ways – slicing herbs, cuts of meat or anything requiring a strong and steady blade - such as taking the tough skin from a skate wing. A utility knife can be used for any jobs requiring fine, delicate precision and moving around tight or small areas, such as taking the seeds from a vanilla pod, or de-boning fish and chicken.
I truly understood the power of these knives when I went to pack them away in my
knife bag. The Evercut Furtif cut right through the bag! These are knives which require respect and care of usage – they should always be put away after use in a knife block or on a magnetic rack.
