Cooking Peperonata with the Scanpan Pro IQ Saute Pan

You probably have not thought about this before, but sautéing is an important method of the cooking process that we use quite a bit! Recipes call to sauté onions with garlic before adding tomato sugo for a pasta sauce or to sauté mushrooms in butter before adding gravy for a sauce to pour over steak. I particularly love to sauté red and yellow peppers (capsicums) with onions and chopped tomatoes to make a childhood favourite of mine – Peperonata! Hence with all this sautéing, we need to employ a pro to assist in fulfilling our sautéing needs – the Scanpan PRO IQ Sauté Pan 26cm in fact! I was super impressed with the quality of the Scanpan Pro IQ Sauté Pan! It’s ceramic titanium non-stick coating was magic allowing the ingredients to sauté for a period of time without catching the base of pan and burning. Additionally, I was pleased to learn that the Scanpan Pro IQ is made from 100% environmentally friendly recycled aluminium core which is squeezed cast for quick and even heat distribution. Admittingly, it usually took me longer to make my recipe for Peperonata using inferior pans not particularly designed with sautéing in mind. However, when using the Scanpan Pro IQ Sauté Pan, I gained time and a glorious jammy stew of Peperonata. Further features of the Scanpan Pro IQ Sauté Pan, that I think are excellent, is the heat resistant clear glass lid; and its ergonomic stainless-steel handles. What a wonderful tool it is to have a heat resistant clear glass lid! You can keep an eye on the ingredients while they sauté without disturbing the cooking process or temperature by continually lifting the lid. Furthermore, when you purchase the Scanpan Pro IQ Sauté Pan 26cm, your lid will have two small holes in the glass allowing for the minutest amount of moisture to escape. This too aids in quicker sautéing! Subsequently, the ergonomic stainless-steel handles are excellent – and somehow, heatproof! I was able to grab the lid handle without a tea towel and without burning my hand! Ingenious! I feel quite confident to claim the following; the Scanpan Pro IQ Sauté Pan 26cm will be the most versatile pan you will use in your kitchen, and that your sautéing results will be equal perfection.

Peperonata (Onion, Capsicum & Tomato Stew)

Ingredients List:

  • 1 large Brown Onion, sliced mediumly
  • 3 medium Red Capsicums, sliced into strips, discarding the stems, seeds and pith
  • 1 medium Yellow Capsicum, sliced into strips, discarding the stems, seeds and pith
  • 4 medium to large ripe Tomatoes, peeled or 1 canned peeled tomatoes
  • 3 tbsp. Olive Oil
  • 100g Butter, unsalted
  • Pinch of fine Sea Salt
  • Freshly ground black pepper
  • Dash of red wine vinegar

Instructions:

If using fresh ripe tomatoes, place them in a large bowl and cover with boiling water for about 40 seconds or until tomato skins begin to peel off. Transfer tomatoes to a bowl of cold water which will allow easy peeling of the tomato skins. Discard tomato skins. Roughly chop the tomatoes and set aside. Place your Scanpan Pro IQ Sauté Pan 26cm on stove top and turn heat to medium. Add olive oil & butter, and heat for a few seconds. Add the sliced onions and gently cook until soft and coloured slightly.

Add to the pan the strips of capsicum and stir for 2 minutes. Cover pan with lid and cook over medium heat for about 12 minutes – making sure to stir once or twice. Once the capsicums have softened, add the chopped tomatoes. Stir and allow to cook uncovered, on simmer for about 20-30 minutes, or until the tomato liquid/juices have evaporated and you are left with a thick jammy stew. Season with sea salt, black pepper and a dash of red wine vinegar. Serve as a sauce through pasta, or with steak, chicken or fish, or with a salad. (To store leftovers please see note below.) Buon Appetito! NOTE: Peperonata keeps well so if you made a lot – store in a sterilised clear jar when both jar and stew are hot, and float enough olive oil over the surface to seal the stew. Will keep in the pantry. Once opened, keep it in the refrigerator.
