Kasumi Carving Knife - is this the best carving knife?

This knife arrived at just the right time, as I decided to take my culinary journey further and had just accepted a chef job at a brand-new restaurant. I was so nervous to be a food blogger working alongside other qualified chefs all coming out of full-time restaurant work. One thing that helped me feel more the part was bringing out my new Kasumi Carving Knife.

Japanese Craftmanship

I noticed that all the professional chefs had Japanese knives I had never seen before. My Kasumi matched the look and feel of their artisanal knives, which they had all sourced from independent suppliers in Japan. The standout features of this style of the knife are as follows:

Top Performance

I certainly have had a great chance to put this carving knife to the test, as at the restaurant we cut our own steaks from one big sirloin fillet. Over and over again, the Kasumi Carving Knife cut even slices with ease. My head chef, Mitch O’Reilly even borrowed my knife for this job, so I watched him at work and snapped some photos. He sharpened it for me on a carbon chef’s steel and then fine-tuned it even further using a whetstone.

Kasumi knives claim to stay sharper than other knives, however, for the kind of tough and repetitive jobs in a commercial kitchen, all knives need regular sharpening. For home use, I love my Global Knife Sharpener and put all my knives through it. It is so easy to use. One of the main ways I use this knife is for slicing fish, such as sashimi where you need long, delicate cuts, or for cutting through the tough skin.

Tip: to score fish skin, pinch your fish fillet together at the ends so it humps up in the middle, then you can easily make slices in the skin. This allows for even cooking and crispier skin.

A carving knife such as this one is such a nice addition to your home repertoire, because carved meats are the show stoppers on your family table, whether that be Christmas turkey, Easter Ham or an everyday roast dinner.
