Summer Steak Salad with a Salsa Twist featuring Le Creuset Grill

As a busy mum of two, I know how important it is to create delicious, healthy fare that doesn’t take forever to achieve. And over the years, I’ve discovered that my preferred method of cooking which aids creative, healthy, and easy eating - is grilling!

No wonder then, my excitement in receiving my new Le Creuset Cerise Cast Iron Giant Rectangular Grill 40 x 33cm! The fact that it was a grill would have sufficed, but it’s additional Cast iron Grill feature, absolutely made my day. There are so many benefits to cooking with Cast Iron, but I’m getting ahead of myself! Firstly, let me share with you some of the wonderful features of the Le Creuset Rectangular Grill that were very applying to me before using it;

Putting it to the test

I employed our new Le Creuset Grill for a midweek meal, for a recipe I created called, ‘Summer Steak Salad Wraps with Salsa Verde’. I love this kind of eating as it’s simple, fresh, easy fare, perfect for the warmer weather. I would usually get hubby to grill the sirloin steaks for this recipe, out on the BBQ, but this time, I was able to do it all inside using our new Grill Pan on my gas stove top (another great reason to have the Le Creuset Grill – a perfect solution for those rainy days when outdoor grilling is impossible)!

All the cooked elements for this recipe are achieved on the grill, therefore eliminating piles of washing up. Is that a smile I can hear?! Yes, I (and my hubby) hate washing up too, which leads me to the next wonderful thing about Le Creuset Cerise Cast Iron Grill – it is super easy to clean. Generally, with cast iron, food releases from the pan easily, making clean up a breeze. And that was certainly the case with this, my new Le Creuset Cast Iron Grill.

Before I leave you to this great recipe, I think it would be remiss of me not to mention the health benefits of cooking with a cast iron grill! Grilling is excellent for lower fat cooking. Additionally, cooking with a cast iron grill eliminates chemicals which are normally found in non-stick pans made with Teflon. When heated to high temperatures, non-stick pans release these chemicals into the air called perfluorinated compounds (PFCs) which are not good for our health.

I think I know what I’m going to buy my Mum for Christmas! HoHoHo!

Summer Steak Salad Wraps with Salsa Verde Recipe

Ingredients: Serves 4 - 6
  • 2 to 3 medium Sirloin Steaks
  • Olive oil
  • Olive oil spray
  • 6 Tortilla Wraps
  • 2 Roma Tomatoes, cut into small wedges
  • ½ Red Onion, thinly sliced
  • Small bunch Rocket leaves, rinsed & drained
  • ½ cup Greek Style Yoghurt
  • 1 Cucumber, peeled, halved, seeded
  • Sea Salt & Black Pepper
For the Salsa Verde
  • 1 small bunch parsley, leaves only
  • ½ Lemon, rind, grated
  • 1 Garlic Clove, peeled, crushed
  • 150ml Olive Oil
  • Pinch of Sea Salt
Method:

To make the Salsa Verde: Place all the ingredients into a mortar and pestle then pound until it forms a paste like consistency (or blitz in a food processor). Set aside.

Preheat the Le Creuset Cerise Cast Iron Giant Rectangle Grill to medium heat. Spray grill with Olive oil spray to cover. Place 2 tortillas at a time on the grill and heat for 2 minutes on each side. Take off the grill and place it on a plate. Cover to keep warm. Repeat the process until all tortillas are grilled.

To Grill the steak: Preheat the Cast Iron Grill to high on a gas stove top, or whatever heating method you have. Rub olive oil and a little sea salt onto your sirloin steaks. Cook steaks for 3-5 minutes on each side (shorter time for medium-rare, longer time for medium). Take off the grill and set aside to rest on a plate covered.

Place yoghurt and cucumber together in a small bowl and mix to coat. Prepare all other salad items and set them aside. Slice the sirloin steaks into stripes.

To build wraps: Take out warm tortilla wraps, pile them up with salad ingredients, top with yoghurt & cucumber, place with strips of sirloin steak, and drizzle the Salsa Verde. Season with black pepper and serve with wedges of lemon.
