Mussels in a White White Sauce Featuring Fiskars Wok

David Kahn |

There's nothing like the sweet smell of mussels cooking.

Mussels are one of my eldest son’s favourite food. When we eat out and he is always asking if mussels are on the menu. I’m not 100% sure what it is that he loves so much about them but I think he finds it extremely fun to pick the mussels from the shells and to soak up the delicious broth with crusty bread. It is not something I had ever made before but I can now appreciate how quick and easy it is. I know that it will be something I make regularly and I will be experimenting with a range of broths in the future. The Fiskars Hard Face Wok is the perfect size to make enough mussels to feed a family of four. It is 28cm in diameter and holds 4.5 L. Once your mussels are washed and debearded this dish really does take just minutes to cook. The broth is simple and quick to make and then you just have to add the mussels and cover. I used this gorgeous Poppy Charles Viancin Silicone Lid. The Bakelite handles make it easy to shake the pan ensuring all the mussels cook. Cook for approx. 6-8 minutes and serve straight away with some crusty bread. Plus, the clean up is so quick with the Fiskars Hard Face Wok. The Hardtec coating makes it a breeze when hand washing yet for an even quicker clean up, it is also dishwasher proof. The Fiskars Hard Face collection is your perfect everyday cooking range. It includes durable pots, pans and casserole dishes that are made with the toughest Hardtec coating. The non-stick properties of this coating are built for tough use and to last. This Wok pan has a thick “energy base” that allows for an even heat distribution to heat the entire pan quickly. This is why this wok is perfect for stir frying, deep-frying, poaching, boiling and searing. It really is a pan for everyday cooking which is exactly what the entire hard face range by Fiskars is built for. I particularly love the unique matte black design. It keeps a “clean” look to the pan and I often serve food to my kids straight from the hob. I love family style meals, where we can help ourselves at the table, and I feel that this pan is aesthetically pleasing and is perfect to serve food in, as well as cooking food. The Bakelite handle stays cool making it easy to transfer straight to the table, moving easily around your cooker and transfering food to a serving dish. Made in Finland, Fiskars Hard Face pans and woks are suitable for all heat sources. They were made to suit all styles and levels of cooking. Whether you are just starting out in the kitchen or a full-time chef, Fiskars superior Hardtec coating makes cooking easier than ever. Shop the entire Fiskars range here.

Mussels in a White Wine Sauce

Takes approx 6-8 minutes to cook.

Ingredients

  • 1 ½ kg mussels in shells, scrubbed and debearded
  • 15g butter
  • 3 shallots, finely chopped
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 100 ml white wine
  • 200ml cream
  • Finely chopped parsley
  • Salt and pepper
  • Crusty bread

Instructions

Heat the butter in the wok over a medium heat and add the onion and garlic. Cook, stirring, until the onions become soft and translucent. Add the wine and bay leaves, increase the heat to high and bring the liquid up to a boil. Reduce the heat to a lively simmer. Add the mussels and cover. Allow to steam for 6-8 mins (until the mussels have opened.) Leave covered for at least 5 mins before checking. This will ensure that you do not let any of the heat escape. Do, however, shake the pan occasionally during this time. Once cooked, remove any unopened mussels. Stir in the cream, chopped parsley and season to taste. Serve immediately with crusty bread.
