There's nothing like the sweet smell of mussels cooking.
Mussels are one of my eldest son’s favourite food. When we eat out and he is always asking if mussels are on the menu. I’m not 100% sure what it is that he loves so much about them but I think he finds it extremely fun to pick the mussels from the shells and to soak up the delicious broth with crusty bread. It is not something I had ever made before but I can now appreciate how quick and easy it is. I know that it will be something I make regularly and I will be experimenting with a range of broths in the future.

Mussels in a White Wine Sauce
Takes approx 6-8 minutes to cook.
Ingredients
- 1 ½ kg mussels in shells, scrubbed and debearded
- 15g butter
- 3 shallots, finely chopped
- 2 garlic cloves, minced
- 2 bay leaves
- 100 ml white wine
- 200ml cream
- Finely chopped parsley
- Salt and pepper
- Crusty bread
Instructions
Heat the butter in the wok over a medium heat and add the onion and garlic.
Cook, stirring, until the onions become soft and translucent.
Add the wine and bay leaves, increase the heat to high and bring the liquid up to a boil.
Reduce the heat to a lively simmer. Add the mussels and cover.
Allow to steam for 6-8 mins (until the mussels have opened.) Leave covered for at least 5 mins before checking. This will ensure that you do not let any of the heat escape. Do, however, shake the pan occasionally during this time.
Once cooked, remove any unopened mussels.
Stir in the cream, chopped parsley and season to taste.
Serve immediately with crusty bread.
