Blueberry & White Chocolate Cookies

Serves 4

Ingredients List:

  • 80g unsalted butter, melted
  • 130g brown sugar
  • 70g caster sugar
  • 1 teaspoon vanilla extract
  • 190g plain flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 egg
  • 80g frozen blueberries
  • 50g chopped white chocolate
  • 4 scoops of vanilla ice cream

Instructions:

Preheat the oven to 180°C (170°C fan oven). Melt butter and cool slightly. Mix butter, sugars and vanilla until well combined. In a separate bowl mix flour, salt and baking powder, then pour the wet mixture and egg onto the dry mixture, fold through until combined. Add the desired flavouring. Pour the mixture into lightly buttered Le Creuset Mini Casseroles. Bake for 15 – 20 mins, or until a skewer when inserted comes out clean. Allow to cool for 10 minutes. Serve warm with extra blueberries and white chocolate shavings with a scoop of ice cream. Note: Feel free to experiment and create any flavour that your desire.
