Shun Knives are set apart from every other kitchen knife by their incredibly sharp edges and unmatched aesthetics. Following the tradition of Seki’s sword smiths, every Shun knife is handmade by highly skilled specialists and requires at least 100 handcrafted steps to complete each knife in production. Kai Shun has over a century of experience in blade-making precision and excellence, utilising traditional Japanese knife-making techniques that are combined with the latest manufacturing technology and the most advanced materials. This separates the brand from other kitchen knives and essentially makes every Shun knife a functional work of art.
Shun, pronounced "Shoon" is Japanese for "at the peak of perfection", was founded by Saijoro Endo over 110 years ago, initially producing folding knives, razors and eventually kitchen cutlery. The company was eventually named Kai Cutlery, which is today known as Kai Group that Shun is a part of.
The company's CEO today Koji Endo is a direct descendant of the founder who conceived the idea of bringing Shun's high-quality knives to the US and European markets and bestowed the name of Shun onto the company's knives.
Whether you are looking for just a chef knife or a more comprehensive Shun knife set, we are proudly stocking one of the largest ranges of Shun knives in Australia at the most competitive prices. We also have a broad selection of Knife blocks and stock comprehensively the Shun Premier, Shun Classic and Shun Sora ranges.
Shun Classic
The Shun Classic range of knives is ideal for both professional chefs and home cooks alike. The Classic line features both traditional European knife blade shapes with traditional Japanese handles. Featuring Shun's patented VG-MAX super steel that combines 34 layers of steel, creating a striking Damascus steel pattern on each side, which not only presents beautifully but aids in supporting the knives' core strength and providing additional stain resistance.
The pakkawood handles are available in a black or creamy white finish (Shun Classic White) that is made of premium resin-impregnated hardwood that is both hardwearing and hygienic, resistant to moisture and provides a comfortable and secure grip.
Shun Premier
Designed to be thinner and lighter for more agile handling, the Shun Premier knife collection provides class-leading balanced weight distribution from tip to the end cap whilst ensuring the same level of stability and strength of the thicker Classic range of knives. They also features the same Damascus steel pattern but of 68 micro layers which then proceeds toward a hammered finish known in Japanese as "tsuchime". The handles are finished in a walnut pakkawood with a stunning steel end cap to aid in balance and the overall beauty of each knife.
Shun Sora
The Shun Sora collection is the most affordable in the Shun lineup without compromising on performance. Featuring a VG10 steel which is clad with one layer of stainless steel on each side of the blade, the Sora knives feature traditional Japanese knife blades with textured plastic handles made of polypropylene (PP) and Thermoplastic Elastomer (TPE) that are easy to care for and use. We recommend this knife range for those who are on a budget but wish to experience and own Japanese knives with the level of sharpness and precision that comes with owning Shun knives.
Should I consider a Shun Knife Block?
As with all knife block sets, Shun knife blocks offer the bonus of value in purchasing a set of knives at a reduced price than if they were purchased individually while also coming with an attractive wooden block to store the knives. For those who may already have a collection of Shun knives, or just a Shun Chef Knife and wish to expand their collection, consider a Shun knife set or individual knives from the collections listed above.
A Shun knife block is also a great gift idea for a professional chef or enthusiastic home cook who appreciates Japanese knife quality and will appreciate the performance and perfected finish that is a signature of quality hand-crafted Japanese knives.
How to sharpen Shun Knives
To ensure you correctly sharpen and maintain the edges of your Shun knives, we recommend using a branded Shun whetstone.
