Simple and easy to make restaurant-quality vegetarian pasta dishes - perfect for lunches and dinners.
These two vegetarian pasta dishes will knock your socks off! Both with a spicy kick, great texture and restaurant-style flavour. We can’t decide which one is the best!
Recipe #1: Simple Spicy Puttanesca Pasta
Serves 2-4 | Cook time: 15 minutes
An easy vegetarian pasta dish with deliciously bold flavours and textures.
Ingredients:
- 2 Cups Pasta of Choice
- 2 Tbsp Olive Oil
- 1 Onion, sliced
- 2 Red Bird’s Eye Chili, sliced
- 3 Cloves Garlic, Crushed
- ½ Cup White Wine
- 1 Tin Whole Baby Tomatoes
- 1 Tbsp Capers
- ¼ Cup Pitted Green Queen Olives, torn apart
- Fresh Basil and Parmesan, to serve
Method:
1. Sauté onion in the olive oil in a medium pan for a few minutes until soft.
2. Add in the chilli and garlic and stir frequently until fragrant – a couple of minutes more.
3. Deglaze the pan with white wine and bring to a boil. Add the tin of tomato plus ½ tin of water, capers and olives. Season well with salt and pepper.
4. Turn down heat to a simmer and cook for 15 minutes, while you cook and drain the pasta (reserve ¼ cup of pasta water)
5. Toss through the pasta with the pasta water, another tablespoon of oil and the sauce.
6. Serve topped with fresh basil and grated Parmesan cheese.
Notes: Traditionally, this dish is made with anchovies. 5-6 can be sautéed with garlic and chilli. We have also tried this with sliced Chorizo sausage. Both are delicious additions!
Recipe #2: Gigi Hadid’s Spicy Penne Pasta alà Vodka
Serves 2-4 | Cook time: 15 minutes
When Gigi Hadid posted this pasta dish on Instagram, it was shared all around the world because it looks and sounds so appealing. It tastes even better than it looks!
Ingredients
- ¼ Cup Olive Oil
- ½ Onion, Finely Diced
- 2 Cloves Garlic, Crushed
- ¼ Cup Tomato Paste
- ¼ Cup Vodka
- ½ Cup Single Cream
- 1 tsp Chili Flakes
- 1 Tbsp Butter
Method
1. Heat olive oil in a saucepan. Add garlic and onion and sauté until soft. 2. Add tomato paste and cook until darker and slightly caramelized. 3. Deglaze the pan with the vodka and bubble until you can no longer smell alcohol. 4. Stir in cream and 1 tsp chilli flakes. Season well with salt and pepper. 5. Cook about 2 cups of Penne pasta in salted water in a separate pot and reserve ¼ cup of pasta water. 6. Drain pasta and transfer to sauce, stirring to coat.
