Roasted Vegetables with Chorizo Sausage in a Pyrex Roaster

When you are swamped with work all day, you often find yourself having little to no time to head out of your workplace to grab a bite or cook yourself a hot meal from scratch. This simple yet delicious dish of roasted vegetables with spicy chorizo sausages will save you time and effort in the kitchen.

Using a Pyrex glass Cook & Go roaster makes this dish really easy to make and take with you to work. The dish is leakproof and microwave and oven safe, so you can easily carry it with you and reheat at the office. It's a great size too as it is large enough to cook for four or batch cooking, separating into separate food containers. Simply cook with it then store it in the fridge to take from each day. Easy to wash up also, the tempered glass is non-absorbent and it's dishwasher safe too.

Prep and cook time: 55-60mins | Serves: 4

Ingredients:

  • 4 peppers, seeds removed and cut into large pieces
  • 2 red onions, peeled and quartered
  • 3 medium potatoes, washed and cut into 2cm dice
  • 1 whole 390g chorizo sausage, sliced thickly
  • 4 tomatoes, halved
  • 2 tbsp oil

Preparation:

  1. Preheat oven to 220 C. Put all of the vegetables, except the tomatoes into the Pyrex Roaster and drizzle with oil.
  2. Cook in the oven for 35-40 minutes, then turn the vegetables over, add the chorizo and tomatoes and cook for a further 15-20 minutes until lightly browned
