Strawberry Quinoa Bliss Balls
The Cuisinart 8 Cup Food Processor has earned a well-deserved spot on my kitchen bench after being given a good work out.
Its large 8 cup capacity means you won't have to prep in batches either. The powerful 350 watt motor is capable of turning a full bowl of veggies into a smooth and hearty soup in seconds.
It certainly is a little work horse and has made it so much easier and faster to make bliss balls, grate veggies for veggie fritters and make cookie batters.
Easy to clean too, which is a huge plus! I find a use for it pretty much every day.
Here's a recipe for Strawberry Quinoa Bliss Balls made using the Cuisinart 8 Cup Food Processor. These bliss balls are the perfect quick and easy healthy snack for lazy afternoons, and they make the perfect lunchbox snack for your kids too!
Ingredients:
1 cup frozen strawberries
1 1/2 cups rolled oats (Be sure to check the label for GF if you are on a gluten-free diet. Substitute rolled oats for quinoa flakes if preferred)
2 tbsp pure maple syrup
1 tbsp coconut oil, melted
1 cup unsweetened desiccated coconut
1 tbsp milk of choice (I used coconut)
Instructions:
- Place the strawberries, rolled oats, maple syrup, coconut oil and half the desiccated coconut into the bowl of a food processor and process until smooth. You will have to stop and scrape down the inside of the bowl with a spatula a couple of times. If the mixture is struggling to come together then add some milk of choice, 1 tsp at a time, until the mixture is smooth.
- Transfer the mixture to a bowl and pop into the fridge for about an hour. This makes it easier to roll into balls.
- Place the remaining coconut into a small bowl. Roll the strawberry mixture 1 tbsp at a time into balls. Roll in the coconut until coated.
Note: Store in an airtight container in the fridge for about 2 weeks. You may also pop it into the freezer if you'd like to store it for a longer duration.
