Piri Piri Chicken in a Pyrex Dish

Now that we are spending more family time at home, it can be tough figuring out what to cook daily. It is especially harder if we have a huge family to feed. We are big fans of one-pot or one-pan recipes as they require minimal effort but produce amazing results. This Piri Piri Chicken recipe is the epitome of a warm home-cooked meal. It covers all the basics such as protein, vegetables, and carbohydrates. Furthermore, you can prepare it ahead of time and bake it when it is close to dinner time, allowing you to tend to other matters while waiting for it to bake in the oven.

We cooked this amazing meal in a Pyrex dish. Known for its durable borosilicate glass construct, Pyrex’s kitchenware items are renowned for being great bakeware of both savoury and sweet dishes. Furthermore, it is a great oven to table piece as you can serve this dish as soon as it is ready. If you have any leftovers, keep it in the dish itself, store it in the fridge and reheat it in the same Pyrex the very next day. Talk about versatility!

Piri Piri Chicken Recipe:

Serves: 4-6 people

Ingredients:

  • 2 tsp sweet smoked paprika
  • 1 tsp chilli flakes
  • 4 cloves garlic, crushed
  • Juice and zest of 1 lemon
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Sea salt and black pepper
  • 4 chicken thighs, skin on
  • 4 chicken drumsticks, skin on
  • 1 red capsicum, deseeded and quartered
  • 1 yellow capsicum, deseeded and quartered
  • 1 red onion, peeled and cut into wedges

Method:

  1. Combine all of the ingredients in a Pyrex dish, cover and place in the fridge to marinate for at least an hour or overnight if possible.
  2. Preheat the oven to 220°C. Cook in the oven for 20 minutes then turn the heat down to 180°C and cook for a further 20 minutes or until the chicken is cooked through.
  3. Serve with potato wedges or chips and a simple green salad.
