Today we are making lasagne! But not your typical dried sheet from packet lasagne, this is a quick recipe made with homemade pasta sheets.
Nothing is better than freshly made, silky pasta and with the Marcato pasta machine you can have fresh sheets for lasagne ready to go in minutes!
To start off with, there are no distinct layers in this lasagne, making this super simple to make. Perfect for when you have veggies in the fridge that you need to use. For those that like to make precise layers, there is also room to as well, just ensure to leave room for a little more prep time.

Fresh Homemade Lasagne Recipe
Tomato Base Ingredients (any sauce will work for this recipe)
1tbsp olive oil
1 onion
2 garlic cloves
1 capsicum
8 mushrooms
2 cans chopped tomato
2 tbsp tomato paste
1 sprig of basil
salt and pepper to taste
Cheese Combination
100g Mascarpone cheese
40g fresh mozzarella
Method:
Heat the oil in a pan and sauté the onions till it browns, add garlic and continue to sauté till onions become soft.
Add the vegetables and cook for a few minutes before adding the tomato and paste.
Bring to the boil and cook for half an hour on low heat adding basil half way through.
Add salt and pepper to taste.

While the sauce is cooking, start making the pasta sheets.
Fresh Pasta Recipe
300g ‘00’ flour
3 eggs
Water
Place the flour and eggs in the Cuisinart mixing bowl and start mixing with a fork. Once combined, use your hands to mix till a dough forms.
Using the Cuisinart Mixer and dough hook, kneed the dough till it looks and feels silky (around 5minutes).
Split the dough into four, and cover with damp towel to stop it from drying out.
Using the Marcato Atlas Pasta Machine, start rolling out the pasta dough till desired thickness is reached.
Preheat the oven to 200°
Tear the pasta sheet into pieces and lay it over the sauce. Press down with a spoon and create another layer for the top.
Dollop the mascarpone cheese around the dish and finish with sliced mozzarella.
Cover with foil and bake for 15min in the oven. Remove the foil and continue to bake for a further 10min.
Remove from the oven and serve.
