Festive Dessert Recipe: Christmas Ice-Cream Pudding

Ideal as an after dinner dessert, this show stopping pudding is effortless to prepare in just 10 minutes! Simply prepare the ingredients, combine and pop it in the freezer to let it firm up beautifully in the MasterCraft Non Stick Pudding Steamer. Ingredients

  • 1 1/2 cups assorted glace fruits
  • 3/4 cup (80g) walnuts, coarsely chopped
  • 1/2 cup (75g) raisins
  • 1 tsp cinnamon
  • 1/2 cup (65g) dried cranberries
  • 1/4 cup (60ml) Cointreau or brandy
  • 1/2 cup (70g) pistachios, coarsely chopped
  • 2L vanilla bean ice cream
  • 1/2 tsp nutmeg
  • 1 orange
  • 2 cups assorted fresh berries, to garnish

Method

1. Roughly chop assorted glace fruits and place into medium mixing bowl. Followed with mixed raisins, cranberries, pistachios, walnuts, cinnamon, nutmeg and Cointreau.

2. Using a grater, grate the rind of 1 orange over the mixture.

3. Thoroughly combine with a cooking spoon and set aside to soak overnight.

4. Using an ice cream scoop, transfer vanilla bean ice cream into a large bowl and allow to soften for 5 minutes.

5. Strain soaked fruit mixture, add to ice cream and combine using the cooking spoon.

6. Line your a pudding mould or steamer with cling film, allowing a little overhang.

7. Scoop in ice-cream, smoothing off the base and folding over the cling wrap to seal. Cover with lid and place in freezer for 8-10hrs to firm up thoroughly.

8. When you’re ready to serve this delicious pudding, remove it from the freezer and let it stand for 5-10 minutes. Peel off the top layer of cling wrap and place your serving dish on top. Carefully turn pudding out onto the serving dish, remove pudding steamer and peel away remaining cling wrap.

9. Top with remaining fresh berries and serve immediately using a cake server.
