Easy & Simple High Tea Recipes for Mother's Day

Make mum feel special this Mother's day with a lovely high tea session

High tea doesn’t need to be overly faffy, fancy, and formal. It’s the thought that counts, and you are certain to make your mum feel very special with this simple assemble. A variety of store-bought and homemade goods is absolutely fine.

What makes high tea feel different than a meal or a grazing board is its delicate touch; using intricate dishes and teacups, paired with a simple selection of delicious food. We have taken the leg work out by giving you the ideas and some simple recipes you can create at home in just 1 hour.

What to include in your high tea

Tea, of course is the drink to choose at a high tea (although mum may like some sparkling wine too!). Serving it in a beautiful teapot adds an elegant flair. Choose your mum’s favourite tea, whether it's the classic breakfast tea with a jug of milk on the side, or a relaxing herbal blend.

Assemble a selection of savoury and sweet finger foods on a quintessential tiered stand to complete a beautiful and appetising display. Have one or two items for each person attending.

  • Sandwiches – with the crust cut off, of course. Traditional fillings are smoked salmon, egg mayo, chicken salad and cucumber. Choose any of those that your mum may enjoy. Slice them into dainty triangles or rectangles and be careful not to overfill the sandwich.
  • Tartlets, Quiches, or Pies – mini is the way to go, made easy by using a solid muffin tray like these from Bakemaster. (See our easy Mini Quiche recipe below.)
  • Muffins – try our delicious Berry Muffin recipe, also made in Bakemaster.
  • Cake – absolutely fine to use a simple, single layer store-bought cake. You don’t want anything too tall or elaborate, as you are going to cut it into bite-sized squares.
  • Scones – served with butter, cream and jam or lemon curd would be lovely. However, a simple, plain scone is also perfectly acceptable. (See our recipe for Scones below)
  • Chocolate Covered Strawberries – so easy to make, yet fresh and beautiful. Melt chocolate in a bowl over some boiling water, then dip whole strawberries in, coating on each side, but also leaving a little red strawberry showing at the top. Lay carefully on a silicon mat. I use the ones from Tovolo.
  • Macarons – leave this one to the expert bakers. Buy a colourful and pretty assortment of macarons from your local bakery or grocery store.

3 Ingredient Classic Scones Recipe

Bake up these classic scones for mum; made with 3 simple ingredients.

Ingredients
  • 2 ½ Cups Self-Raising Flour
  • 70g Cold, Chopped Butter
  • ¾ Cup Cold Milk
Instructions

1. Preheat oven to 200C/180 fan forced.

2. Mix all ingredients in a large bowl with a fork, until the dough resembles breadcrumbs.

3. Bring together into a ball, then press down onto a pastry mat, about 2 cm thick.

4. Cut out and lay on a lined baking sheet. Have each scone lightly touch one another to help them rise.

5. Bring remaining dough together and repeat.

6. Brush tops with a little milk, then bake for 12-15 minutes until risen with a light golden sheen on top.

Mini Quiches Recipe

Make a lovely assortment of mini quiches using easy ingredients and a regular sized muffin tray. Simple, elegant and delicious.

Prep time: 15 minutes | Cook time: 25 minutes

Quiche Ingredients
  • 3 Large Eggs
  • ¾ Cup Cream
  • ½ Tsp Salt
  • Pinch Pepper
  • Puff Pastry
Filling Ideas
  • Chopped Ham
  • Grated Cheese
  • Chopped Olives
  • Chopped Sun-Dried Tomatoes
  • Crumbled Feta Cheese
  • Sauteed Spinach
  • Sauteed Mushrooms
  • Softened Onion
  • Cooked Bacon
Instructions

1. Thaw pastry sheets on the bench. Preheat oven to 180C/160C fan. Spray regular sized muffin tin with cooking spray. Assemble desired filling ingredients.

2. Using a cutter a little bigger than the size of the muffin tin cups, cut pastry circles, and press down into the trays. Prick with a fork 4 times.

3. Cook the bases for 6 minutes and remove from the oven.

4. Place 1 tablespoon of filling in each pastry shell.

5. Whisk together the egg, cream and salt. Evenly distribute among the pastry shells.

6. Bake for 20 minutes. Serve warm or at room temperature.
