Easy Microwave Recipe: Beer-Braised Chicken

Anyone with a busy lifestyle will understand the struggle of getting weekday dinners ready every single day. With so much to accomplish in a day, cooking dinner may seem to require a herculean effort. This recipe takes the hassle out of cooking, freeing up time for other more important things like enjoying the company of your loved ones. We used an Anyday Large Shallow Dish for this recipe as it cooks the chicken and potatoes beautifully and quickly too - only 12 minutes of total cooking time!

This flavourful beer-braised chicken features delightfully tender chicken and potatoes. It’s the perfect comfort food anytime you need a mood boost. Great for a quick family dinner during a busy week or for an easy Sunday dinner. The beer replaces conventional stock and adds another dimension of flavour. Cooked entirely in a microwave, all you have to do is prepare the ingredients and pop it in the microwave!


Prep Time: 7 - 10 mins | Cook Time: 11-12 mins Ingredients:
  • ½ cup (45g) button or cremini mushrooms, quartered (about 4 mushrooms)
  • ¼ cup (30g) frozen pearl onions
  • ¼ teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • ½ cup (120ml) light beer
  • 2 teaspoons cornstarch
  • 1 teaspoon salt, divided
  • 2 bone-in, skin-on chicken thighs
  • ½ teaspoon paprika
  • 4 small potatoes, such as fingerling or marble
  • 1 teaspoon red wine vinegar
  • Chopped parsley (optional)
Preparation:

1. Place the mushrooms, onions, and oil in the Anyday dish and toss to coat. Cover with the lid (knob lifted) and cook for 2 minutes.

2. In a small cup, make a slurry of the cornstarch and a splash of the beer. Add the beer, cornstarch slurry, and 1/2 teaspoon of salt to the vegetables and mix well. Continue cooking for 2 minutes then stir until the sauce has thickened. If needed, cook for another 30 seconds until the sauce has thickened up.

3. Season the chicken evenly with paprika and the remaining salt on both sides. Nestle seasoned chicken and potatoes into the sauce and continue cooking for 7 minutes or until chicken and potatoes are cooked through.

4. Add red wine vinegar and sprinkle with chopped parsley before serving.

Serving Suggestions & Tips:

1. To make this dish gluten-free, use a certified gluten-free lager or pilsner, or substitute for chicken stock.

2. If you can’t find pearl onions, substitute with chopped white onion or shallot.

3. For added crunch, sprinkle with panko bread crumbs and bake in a 260°C oven for 5 - 8 minutes, or until bread crumbs are toasted and the chicken skin is crispy.
