Easy Healthy Fried Rice

A healthy one-wok meal for the entire family

Fried rice is super easy in the Le-Creuset Toughened Non-Stick 32cm Wok, with its large base and superb non-stick properties that allows you to fry the omelette right in the same pan as the rice. Kids will love this simple vegetable fried rice with corn, carrots and peas. This recipe is made healthier with the use of less oil than the traditional fried rice, brown rice, and tamari instead of soy sauce.

Serves: 4-6 | Prep time: 10 minutes | Cook time: 30 minutes

Ingredients

  • 2 cups short grain brown rice
  • 4 cups water or chicken stock
  • 2 tsp peanut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, crushed
  • 2 carrots, finely chopped
  • 1 ear of corn, kernels removed
  • 2 tbsp tamari, or low-sodium soy sauce
  • 2 eggs
  • 1 cup frozen baby peas

Method

1. Add the rice with the water or stock to a small saucepan and bring to a low boil. Turn down and cover with a lid, and leave to cook for 30 minutes. Check halfway and add more liquid if it is catching at the bottom.

2. Check after 20 minutes, take off the heat and leave the rice to sit for another 10 minutes (this step of pre-cooking the rice can be done a day in advance if required).

3. Heat the wok to medium and add the oil.

4. Once hot, add the onion and carrot and stir-fry until softened for about 2-3 minutes. Add the garlic and stir-fry for one minute.

5. Add the rice, corn and tamari, then stir-fry for another 2 minutes.

6. Make a well in the bottom of the wok by moving the rice mixture up the sides of the wok. Break the eggs into the bottom of the wok. Scramble lightly and allow the eggs to set. Roll up the omelette and chop into pieces with your spatula.

7. Stir your eggs into the rice.

8. Add the frozen peas and stir again until they are just thawed for about 2 minutes.
