Delicious Tender Spiced Chicken in the Instant Pot

Don’t you just love it when you bite into a roasted or braised chicken and the tender meat easily falls off the bone leaving no scraps behind? That is exactly what you can expect from this recipe! Savoury and succulent meat encased in a nice golden crisp skin, the Tender Spiced Chicken is guaranteed to be a hit at the dinner table.

Thanks to the Instant Pot, we were able to create this delectable Tender Spiced Chicken in no time at all. After searing both sides of the chicken, allow the “Pressure Cook” function to complete the cooking process while you prepare some salad or mashed potatoes on the side. It can be enjoyed on its own or be shredded and tossed together with some freshly cut greens for a healthy and balanced meal. If you have any leftovers, save them for a tasty homemade sandwich for lunch the next day.

Tender Spiced Chicken Recipe

Prep Time: 5 minutes | Cook Time: 70 minutes | Serves: 4

Ingredients:

  • 1 tbsp packed brown sugar
  • 1 tbsp chilli powder
  • 1 tbsp smoked paprika
  • 1 tsp freshly chopped thyme
  • 1 whole small chicken (approximately 1.36kg to 1.8kg)
  • kosher salt
  • freshly ground black pepper
  • 1 tbsp extra-virgin olive oil
  • 2/3 cup low-sodium chicken broth
  • 2 tbsp freshly chopped parsley

Method:

  1. Add brown sugar, chilli powder paprika and thyme in a small mixing bowl
  2. Using a whisk mix ingredients so until evenly spread.
  3. Pat chicken dry with paper towels, then season generously with the kosher salt and pepper. Rub the brown sugar mixture all over the chicken.
  4. Set Instant Pot to Sauté. Once heated, add oil, then chicken (breast side down).
  5. Sear chicken until skin is crispy, 3 to 4 minutes. Use tongs to flip chicken, then pour broth into the bottom of the Instant Pot.
  6. Secure lid and set to Pressure Cook on High for 25 minutes.
  7. Allow Instant Pot to depressurise naturally, then remove the lid and take out chicken. Let rest for 10 minutes before slicing.
  8. Garnish with parsley and serve warm.
