But first, what is confit?  Confit is a popular cooking method known for its slow-cooking process and preservation qualities. It involves gently cooking and preserving various types of food, such as meats or vegetables, in their own fat or oil. This technique can also include the addition of aromatic herbs, spices, and other flavorful ingredients. Originally developed as a means of food preservation before the advent of refrigeration, confit was a clever way to extend the shelf life of perishable items. By immersing the food in fat and slowly cooking it at a low temperature, the flavours intensify, resulting in tender and succulent creations.

In this recipe, we use the Le Creuset Signature Cast Iron Shallow Casserole to make this from start to end. The process involves gently immersing garlic cloves in oil within the cast iron casserole, allowing them to soften and infuse with the oil's flavours through the slow, controlled heat. The cast iron construction ensures an even distribution of heat, while the shallow design offers ample surface area for efficient simmering.

Confit Garlic Tomatoes Recipe

Prep Time: Under 30 min. | Cook Time: Under 2 Hours | Serves: 2-4

Ingredients:

  • 1.5kg exotic tomatoes
  • 250ml olive oil, plus extra for jarring
  • 1 head of garlic, crushed
  • Sea salt

Method:

  1. Place all the ingredients into the Le Creuset 30cm Signature Shallow Casserole and roast at 120°C for 1 hour and 30 minutes.
  2. Remove from the oven and place into a jar.
  3. Cover with olive oil and close with an airtight lid.
  4. Serve warm, spooned over grain salads, and use the pan juices as a vinaigrette or eat on butter-toasted bread with smooth goats’ cheese or ricotta
