The addition of grain mustard and Guinness stout to this traditional cauliflower cheese recipe is the secret to its beautifully complex flavour. This may be the best cauliflower cheese you have ever experienced!

Irish Cauliflower Cheese with Grain Mustard & Guinness Recipe

Time: 1 hour | Serves: 6

Ingredients:

  • 1 large head cauliflower
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • 1 cup cream
  • ½ tsp sea salt
  • ¼ tsp freshly grated nutmeg
  • 2 cups grated cheese
  • ½ cup Guinness
  • 2 tbsp grain mustard

Instructions:

  1. Heat oven to 200C.
  2. Break the cauliflower into bite-sized florets and place them in a shallow casserole dish. Toss with oil, salt and pepper, and roast for 20 minutes.
  3. In a frying pan, melt the butter then stir in the flour. Cook for 2 minutes, stirring regularly.
  4. Mix together the milk and cream, and heat in the microwave or on the stove until hot.
  5. Drizzle in the milk and cream slowly to the roux, all the while stirring until incorporated.
  6. Add in the Guinness and grain mustard. Stir well, and bring to a low boil for 2 minutes to thicken.
  7. Take off the heat, and add in the cheese. Stir until incorporated.
  8. Pour over the cauliflower, then bake in the oven for 30 minutes.
