Easy Camp Cookout Ideas with A Grill Pan

I love cooking with cast iron when we go camping. I know that the pans will work great in any environment, be it right over the coals of our fire, on a public barbecue or in the oven at the camp's kitchen. The great thing about using a grill pan is that the food will still get those tantalising char marks but will not ever fall into the grates like it would when using a standard grill. They also act as a mini oven, keeping heat and moisture inside the food. Perfect for big bone-in steaks, whole fish, baked potatoes, burgers and more.

Camp Cooking Equipment Essentials:

  • 2 x Heavy-duty cookware
  • 1 x Pot for boiling water, cooking corn, pasta etc
  • 2 x Mixing bowl (these can double up as salad bowls)
  • 2 x Small bowls or containers for dressings
  • 2 x Lightweight cutting boards
  • 4 x Stackable Tupperware containers for herbs and chopped ingredients
  • 1 x Long tongs, wooden stirring spoon, salad servers and vegetable peeler
  • 1 x Multi-purpose knife with sheath and a serrated knife
  • 1 x Large bucket for transporting cookware and dishes to the wash-up location
  • 1 x Camp wash for dishes (doubles up as a shower gel or shampoo)
  • 1 x Cooking oil, salt and pepper
  • Foil, paper towels and tea towels
Camp food doesn’t need to be boring! The following recipes are fun and packed full of great flavour for your next outdoor cooking adventure. Use the same herbs for the prawn wraps in the slaw mix for your burgers to make things easy and simple.

Prawn Skewer Salad Wraps with Lime Dressing

Serves: 4 | Prep time: 10 minutes | Cook time: 5 minutes Ingredients:
  • 12 Large Shelled Prawns
  • ½ Cup Grated Carrot
  • ½ Cup Mixed Picked Herbs, such as Coriander, Parsley and Mint
  • 12 Leafy Lettuce Leaves
For the Dressing:
  • Juice of 2 Limes
  • 3 Tbsp Brown Sugar
  • 1 Tbsp Fish Sauce
  • 1 Tbsp Tamari (or Soy Sauce)
  • 1 Red Birdeye Chili, chopped
  • 1 Scallion, Chopped
  • 1 Tbsp Water
To Serve:
  • Handful of peanuts
  • Squeezy Mayo
Instructions:
  1. Heat a grill pan over high heat.
  2. Combine the ingredients for the dressing in a small bowl.
  3. Skewer each prawn through the tail and up through the thickest part, so it is straight on the skewer. Drizzle with oil, salt and pepper.
  4. In another bowl, combine the carrot and herbs and arrange 12 lettuce leaves on a small plate, top each one with some carrot and herb mix.
  5. Grill the prawn skewers for about 2 minutes a side or until it turns opaque and firm.
  6. Slide each prawn off the skewer and into the lettuce cup. Top each lettuce cup with some dressing, mayo and peanuts.

Gochujang Pork Burgers, Grilled Apple and Ribbon Slaw

Serves: 4 | Prep time: 10 minutes | Cook time: 10 minutes Ingredients:
  • 500g Minced Pork
  • 2 Tbsp Gochujang Paste (alternatively use Sriracha)
  • Salt and Pepper
  • 1 Apple
  • Burger buns (optional)
For the Slaw:
  • 1 Carrot
  • 1 Zucchini
  • 1 Red Onion
  • A Handful of Herbs (Such as coriander, Parsley and Mint)
  • 1 Tbsp Mayonnaise
  • 1 Tbsp Greek Yoghurt
  • Juice of 1 Lime
  • Salt and Pepper
Instructions:
  1. In a mixing bowl, mix together the pork with the gochujang and season well with salt and pepper. Form into 4 burger patties and set aside while you heat the grill with your dry pan on top.
  2. Using a vegetable peeler, make ribbons from the carrot and zucchini. Cut the red onion into very thin half-moons. Chop the herbs and add in the rest of the ingredients.
  3. Cut the apple into whole, round slices about 2 cm thick and soak in a little water until ready to grill.
  4. Now that the grill is heated, drizzle some oil on the pork burgers and place onto the pan. Cook for around 5 minutes a side or until just cooked and still juicy. Check often for any signs of charring and turn/move out of direct heat as required. Cover with foil to keep warm.
  5. While the burger patties are cooking, drain the apples slices, place on a paper towel and spray lightly with cooking spray. Char on each side for a couple of minutes. Place directly onto the pork burgers.
  6. To serve, cut open the buns and warm on the grill for a few seconds. Give each pork burger a pile of slaw and a grilled apple slice.
Notes: Don’t heat oil in the pan over high heat as it can burn. Add it onto the food, or into the pan right before cooking.

Tiny Teddy Grilled Banana Splits

Serves: 2 | Prep time: 10 minutes | Cook time: 10 minutes Ingredients:
  • 2 Ripe Bananas
  • 4 Tbsp Chocolate Melts
  • 2 Tbsp Mini Marshmallow
  • 1 Packet Tiny Teddies
Instructions:
  1. Cut each banana down the middle with the ends pointing up.
  2. Fill the gap with chocolate chips, marshmallows and tiny teddies.
  3. Place directly onto a pan inside your barbecue (or if over a direct fire you’ll need to completely wrap in foil)
  4. Let cook for 5 minutes or until the marshmallows are bubbly and the chocolate is melted.
  5. Allow to cool for a few minutes and then eat with a spoon!
