Delicious Banana Bran Blender Muffins

Easy to make sweet banana bran muffins for a delicious after school snack

These delicious muffins made with bran cereal are perfect for breakfasts, lunchboxes or after school snacks. These easy to make muffins taste just like banana bread, with the added benefit of extra bran for healthy gut flora. Use any bran cereal: even with sultanas!

Ingredients:

  • 2-3 Ripe Bananas
  • 2 Cups Any Bran Cereal
  • ½ Cup Coconut Oil or Soft Butter
  • 2 Eggs
  • ½ Cup Plain Yogurt
  • Pinch salt
  • 2/3 Cup Sugar
  • 1 tsp Vanilla
  • 1 1/2 tsp Baking Powder
  • 1 ½ Cups Plain Flour

Instructions:

  1. Add all the ingredients except the flour and baking powder to your blender. Whizz until the mixture is smooth.
  2. Add the flour and baking powder and pulse to just bring together.
  3. Line and grease either a 12 large cup muffin pan, 24 medium or 36 mini muffins. Divide the batter with a spoon, filling ¾ of the way full.
  4. Bake for 18-20 minutes for large, 14-16 minutes medium or 9-11 minutes for mini. Allow to cool slightly in the pan before turning out. Cool completely before freezing in an airtight food container.
