Planning a small get together with your friends at home? This simple asparagus and pimento cheese puff recipe is a crowd-pleasing appetiser that will surely bring your guests back to the table for more. For easy and fuss-free cooking, prepare these cheese puff pastries in a Pyrex rectangular glass roaster. We love the versatility of this roasting pan as you can roast the puff pastries and serve straight from the oven to table as soon as it is ready. Let these cheese puff pastries be the perfect savoury accompaniment at your next casual get-together. Cook and Prep time: 40 mins | Serves: 6

Ingredients:

  • 50g grated cheddar
  • 20g shallots
  • 20g mayo
  • 10g cornflour
  • Chilli powder to taste
  • ½ tsp Worcestershire sauce
  • Puff pastry sheet
  • 6 large asparagus, woody ends cut off and peeled

Preparation:

  1. Mix the cheddar, shallots, mayo, cornflour, chilli and Worcestershire sauce together in a mixing bowl to make pimento cheese.
  2. Roll out approximately 10cm of puff pastry and spread the pimento cheese mixture evenly onto it.
  3. Cut six strips of pimento cheese topped pastry approximately 1.5cm wide.
  4. Curl each strip around a spear of asparagus and place them onto the Pyrex roaster or a baking sheet.
  5. Roast at 190°C for 25 minutes.
  6. Carefully remove the asparagus twists from the tray and let them cool down before serving.
