What is a Sauteuse? Everything You Need to Know and More

A sauteuse pan is a handy all-rounder in the kitchen. Virtually unlimited in its uses: be that frying, sautéing, braising, slow roasting, or searing. This versatility makes it the go-to pan for multiple ways of cooking. Its large volume means that it can accommodate stews, soups, and casseroles. They look great as a serving dish for all-in-one family dinners or large vegetable side dishes. A sauteuse can go straight from stove or oven to table.

The Makeup of a Sautuese Pan

A sauteuse pan is generally made with a heavy base, such as aluminium or steel. It is usually hard anodised, which means that the material has gone through a process to make it extra durable and hard-wearing, by electrolysis at sub-zero temperatures using a high-intensity electric current which creates a 60-micron thick layer of aluminium oxide. This produces a surface that is harder than steel and fantastic for cooking as it is considered non-toxic, non-staining and thermally efficient. These pans have undergone such a process and then finished with layers of a PFOA-free non-stick to make it extra easy for daily use and cleaning.

The sauteuse pan is partly a frypan, with a large flat base, yet the deeply sloped sides allows for a very large liquid capacity. This combined with a domed lid makes it a perfect way to cook large braises or roasts. The pans are ideal for slow roasting more so than searing high heat temperatures. Heat resistant handles on each side allow for easy transport from stove to oven to table.

What uses do Sauteuse Pans have?

With its deep, flat base, the sauteuse is excellent for browning on the stove and then transferring to the oven. The high sides help stop drips and spatters in the oven. Sautéing vegetables such as mirepoix of carrots, onion and celery, then adding stock for soups and casseroles or braises make it excellent for family-style meals. The wide surface area creates a surprising amount of volume without so much height that a traditional stockpot has. Stocks are easily simmered for hours in the sauteuse. The domed lid allows for gently steaming and holding moisture in, while the wide-area provides fast reduction of liquid when required, with the lid off. The wide base makes the sauteuse perfect for cooking rice dishes such as risotto.
