Measure Twice, Cut Once: Compare Your Scanpan Cookware Options Before You Buy

originally published March 22, 2016, updated July 10, 2020 For Australian lovers of the iconic Danish cookware brand; Scanpan, coming to grips with the benefits of each of their six models is a bit complicated. Owning great cookware only gets you so far. Buying the right model for you and knowing how to use it to its full advantage is what really makes a big difference in the kitchen. So we’ve made it simple. Here’s a complete breakdown of everything you need to know about each of Scanpan's product lines, from which ranges are induction compatible to the everyday classic essential pans.

Scanpan Classic Cookware | Mid Range

Scanpan’s Classic Cookware line is designed to bring their famously durable non-stick titanium ceramic coating front and centre. The result is solid pans with good heat distribution that's designed to last. You may be thinking that your last pan with a non-stick coating barely made it a few months before being scratched beyond recognition. The difference with the non-stick Stratanium coating is that it’s equipped to handle metal utensils without scratching in addition to being generally more durable than most generic non-stick options. Of course, we always recommend avoiding metal utensils to avoid unnecessary product damage. Another feature that adds to the durability of this set is that the panhandles are attached without screws or rivets that can loosen over time. To top it all off, these pans have an impressive oven-safe temperature of 260ºC. All in all, the classic line is the most well-rounded and versatile of Scanpan’s cookware lines.

Scanpan Clad 5 Cookware | Mid Range

While non-stick cookware has become the go-to pan type for many home cooks, when you’re looking to brown meat to create an outstanding pan sauce, sticking is the whole point. That’s why you'd want a stainless steel cooking surface if you want to get the best flavour possible out of your meat. The other challenge with browning is heat control. Too much heat in one area and not enough in another translates to unevenly browned meat and disappointing results. The Clad 5 line prevents this with five layers of stainless steel, ensuring that heat is evenly distributed. The construction even works on induction cooktops. Combined, these features make the Clad 5 set more of a specialty line designed for dishes which don’t do well with non-stick coatings. If you're the kind of cook who tends to put their pans through the kind of abuse that ruins non-stick coatings, the tough steel of the Clad 5 range is a great option. At the same time, a stainless steel pan is also versatile enough to do nearly everything a non-stick pan can do, as well.

Scanpan CTX Cookware | Professional Level

The Scanpan CTX line combines the top-notch heat distribution of the Clad 5 line with a versatile and durable non-stick titanium ceramic coating. Here, each piece has between 3 and 5 layers of steel and aluminium. The addition of an aluminium core means that you still get the excellent heat distribution and retention of steel, but with even faster cooking times. The result of combining all these technologies is what the company calls “Scanpan at its best.” The CTX set offers top-of-the-line products perfect for home cooks who don’t compromise on the quality of performance, by bringing together some of the best features of Scanpan’s other lines.

Scanpan Coppernox Cookware | Mid Range

The inclusion of impact-bonded copper into the Scanpan Coppernox Line is designed to give a top-of-the-line performance in one crucial area: speed. Combining copper and aluminium allows pans to rapidly respond to temperature changes, giving you precise control. At the same time, layering these metals prevents those dreaded hot spots from catching you by surprise. Altogether, these pans are perfect for dishes that require fast changes in temperature to get a recipe just right. Silicon handles and induction compatibility round off the package. This is another specialty solution for cooks looking to avoid heat-control-related problems like burned garlic or overcooked egg in a stir fry.

Scanpan Impact Cookware | Quality Affordable Stainless Steel

Many younger cooks today grew up with non-stick pans and can be hesitant to try out a steel option. Scanpan Impact Cookware provides two layers of stainless steel sandwiching a layer of aluminium to provide durability and excellent heat distribution. If you're unsure about whether to invest in a Clad 5 model, this line is an excellent introduction to the benefits of cooking without a non-stick coating. Frankly, everyone should have a stainless steel pan in their arsenal for those times when you need exceptional browning abilities from a durable pan. The Impact series of the easiest way to get that on a budget.

Scanpan Axis | Quality Heavy-duty Stainless Steel

If you tend to cook in larger portions, the Scanpan Axis range is most probably the type of range you would want to look into. With an exclusive 5 layer construction with heavy-duty stainless steel and a copper core, rest assured that this range is equipped for maximum durability and superbly even heat distribution. Beautifully designed in Denmark, this contemporary and copper band circling each piece with ergonomic riveted handles lets you fry, saute, sear or caramelise in style.

Scanpan HaptIQ | The Best Quality Non-stick coating

The Scanpan HaptIQ range features the revolutionary non-stick Stratanium+ coating that surpasses all previous non-stick coatings. The durability and strength of Stratanium+ extends your cookware's lifetime as well as enabling the use of metal utensils. Not only does it provide even heat distribution and perfectly even browning when frying, but also has exceptional food-release capabilities, ensuring that your dish comes out beautifully. And once you're done, it is super easy to clean, making it one of our most favourite cookware range. Its frying capabilities were put to the test by a group of highly regarded chefs, and it successfully met their highest requirements. This resulted in the HaptIQ range being recognised as excellent cookware to be used in both commercial and domestic kitchens. You'll also love its beautiful sleek and polished surface that offers a unique look in your kitchen.

Scanpan TechnIQ | Quality Professional Cookware at Home

Scanpan TechnIQ's cookware range challenges traditional kitchen design without compromising on functionality. Unlike the HaptIQ which has polished stainless steel exteriors, the TechnIQ range has the entire bases of the pans enveloped in the Stratanium+ nonstick to be low maintenance and easy to clean. The Techniq range has been specially developed alongside professional chefs and will appeal to home cooks as it is suitable for use in both commercial and home kitchens. Each piece from the TechnIQ range is hand cast from recycled aluminium and provides excellent searing results with little to no oil, making it a great piece of cookware for healthier cooking. The TechnIQ range is perfect for foodies and home chefs alike.

Cleaning and Care

The products in all of these Scanpan lines are tough, but knowing how to clean them properly is key to extending their life and service in your kitchen as much as possible. While all of these are dishwasher safe, we recommend hand washing to avoid any unnecessary damage.

For the Non-stick Stratanium and Stratanium+ Coating

From its previous GreenTek non-stick coating, Scanpan has enhanced and created a better non-stick coating - the Stratanium. The Stratanium non-stick coating is featured in Scanpan's Classic cookware while the Stratanium+ non-stick coating is featured in Scanpan's HaptIQ and TechnIQ range. With this new and improved Stratnium and Stratanium+ non-stick coating, you can safely use your metal utensils and cleaning has never been easier. To ensure your Scanpan cookware is properly cleaned, leave the cookware to cool after use then, wash with warm soapy water. Scanpan recommends letting the insides soak in water to make it easier to remove any food residue. Be sure to wipe dry before storing it away. All in all, these pans are somewhat easier to clean than stainless steel or copper.

For Stainless Steel and Copper Pots & Pans

Stainless steel and copper are included in Clad 5 and Coppernox cookware. Just as with the non-stick Stratanium coating, it’s not recommended to use any kind of metal scouring pad on these surfaces. Once again, soaking is the best way to remove any difficult bits of food. However, it’s vital to ensure the pan cools down before adding water, or you risk warping.

Choosing the Best Scanpan Cookware for Your Kitchen

As you can see, Scanpan offers a variety of options for any budget and any cooking need. We hope this post was useful in helping you determined the differences and discover which lines are best for you. In the end, though, you’ll most likely want to consider buying pieces from more than one of these cookware lines. After all, you'll want a non-stick surface for cooking eggs and a tough steel surface for steaks. So, consider each pot or pan you’ll need and which line is going to have the optimal set of features.
