Marcello Farioli, born and raised in Italy came to Australia to share his love for Italian cooking. With over 15 years of experience, Marcello decided to start his own catering company based in Sydney, Rustic Kitchen serving Italian food at its best. The gnocchi recipe here is only one of the many dishes you could learn when spending the day perfecting your pasta making techniques.

Gluten Free Gnocchi Recipe

Ingredients

  • 1 kg Ricotta
  • 300g Parmesan
  • 4 Eggs
  • 150g Gluten Free Flour
  • 5-10g Salt

Method

Mix all the ingredients together until a dough forms and lay flat on a dusted bench top. Cut into long strips and roll each one to form a sausage. Cut the strips into pieces and throw into pre-boiled water for 3 minutes or until they begin rising up to the surface. If cooking frozen gnocchi, cook from frozen for around 3-4min. Mix with your favourite pasta sauce for a delish Italian meal!
