This Healthy Slow Cooker Turkey/Chicken Chili is light enough for spring yet still full of warming flavours for the perfect rainy day food. It is one of those fantastic recipes where you pretty much dump all the ingredients into your slow cooker, making it easy to get dinnertime sorted before you even leave home in the morning. Choose to use chicken or turkey mince.
Serves 4-6 | Prep time: 5 mins | Cook time: 4-6 hours
Ingredients:
- 500g Chicken or Turkey Mince
- 1 White Onion, minced
- 2 Cloves Garlic, crushed
- 2 400g Cans Crushed Tomatoes
- 2 Tbsp Pickled Jalapenos, chopped
- 2 400g Cans of Beans (I used kidney beans and lentils), drained
- 1 Tbsp Brown Sugar
- 1 Tbsp Cumin
- 1 tsp Coriander Powder
- 1 Heaped tsp Chili Powder
- 1 tsp Garlic Powder
- 1 tsp Salt
To Serve:
Grated Cheese, Sliced Green Onion, Sour Cream
Instructions:
- Set your Cuisinart MultiCooker to BROWN/SAUTE on 175C (or if using a normal slow cooker, brown first in a pan on the stove). Add the chicken/turkey mince and the onion and saute for 5 minutes or until the meat is opaque and the onions translucent.
- Add the garlic and saute for another minute
- Turn the MultiCooker to SLOW and add in the rest of the ingredients. Set the timer for 4-6 hrs.
- Once ready to serve, top with cheese, sliced onion and sour cream.
