The Best 3 Christmas Sauces in The Windsor

If a traditional Christmas feast with all the trimmings gives you that warm and cozy feeling inside, then look no further. These three classic sauces are perfect for your holiday entertaining.

Easiest Turkey/Chicken Gravy

This gravy could not be easier and lets the roasting pan do all the work by collecting the juices you need for your stock.

Serves 8-12 | Cook time: 10 minutes

Ingredients:

  • 2 Cups Chicken or Turkey Roasting Broth
  • 2 Heaped Tbsp Flour
Or just simply remember the formula of one cup broth to one tablespoon flour. You can use store-bought stock or top up your roasting juices with a little water if you need.
Instructions:
Pour off all the juices from your roasting tray into a jug or tall glass. Allow the contents to settle and then spoon off most of the fat layer from the top if there is excess of a few tablespoons of fat. Keep some fat for flavour and silkiness.

Notes: To make this gravy, I roasted a chicken on my Masterpro Airflow Roaster as per my Rotisserie Citrus Chicken and Vegetables post. I love this pan for the ease in collecting and pouring off roasting juices! This would work exactly the same for turkey, and on the post recipe notes, I have timing and weight instructions.

Tastiest Cranberry Sauce Made from Dried Cranberries!

This delicious cranberry sauce is infused with cherries, orange and cinnamon, giving it subtle flavours of Christmas time, and goes perfectly with your turkey or ham this year. The shortcut secret is that it is made with dried cranberries rather than fresh, so you can have this beautiful homemade cranberry sauce with ingredients you probably have in the pantry right now.

Serves 8-12 | Cook time 1 hour

Ingredients:
  • 170g (1 ¼ Cup) Dried Cranberries
  • 50g (1/4 Cup) Glacé Cherries
  • 170g (¾ Cup) Raw Sugar
  • Zest and Juice of 1 Whole Orange
  • 1 Whole Green Apple, Grated
  • ¼ tsp Ground Cinnamon
  • Water to Cover (About 2 1/2 cups)
Instructions
  1. Place all ingredients in a saucepan and bring to a low boil.
  2. Cook, stirring occasionally for about 15 minutes until it thickens and the juice coats the back of a spoon.
  3. Remove from heat and pour into a sterilised jar, place lid on tightly and allow to cool. Refrigerate until ready to serve.

Easy Red Wine Jus with Rosemary and Grain Mustard

This glossy sauce has a lot of depth of flavour with the rosemary and grain mustard. It will take a steak to the next level or perfect with a favourite holiday alternative: Beef Wellington.

Serves 8-12 | Cook time 10 minutes

Ingredients:
  • 2 Cups Red Wine
  • 1 Large Sprig Rosemary
  • 1 tsp Brown Sugar
  • 2 Cups Beef Stock*
  • 1 Heaped Tbsp Grain Mustard
  • 1 Tbsp Butter
Instructions:
  1. Place the red wine, sugar and rosemary in a saucepan and heat until boiling.
  2. Reduce by half, then pour in the beef stock. Whisk in the grain mustard.
  3. Bring to the boil again and reduce until the sauce just coats the back of a spoon.
  4. Whisk in the butter to finish.
Notes: Buy the best quality beef stock available to you – it makes a big difference to the finished sauce.
