Unlike traditional cast iron cookware, Staub cocottes and dutch ovens come with two layers of glazed enamel coating, making the cocottes rustproof and easy to clean. One of the most well known features of the Staub French Ovens & cocottes, is the internal basting function. Staub cookware lids feature dimpled surfaces on the interior, designed to collect evaporated moisture and aromas during cooking, causing the lid of the dutch oven lid to drip, continually basting the food while cooking. 

The unique self basting lid of the Staub dutch ovens & cocottes allows food to retain 10% more moisture over a 55 minute cooking period. The brass and nickel knobs on Staub french ovens can withstand heat up to 800˚C in comparison to conventional cookware knobs that can only withstand 280˚C.
