The blade has a slightly curved edge with a fast taper towards the tip compared to Japanese knives which has a more gradual taper from the heel to the tip. The 27cm knife is popular for professional chefs and those that love to use a larger blade. The Professional series feature full tang and stainless steel bolster. This paring knife is well-balanced and suitable for both the professional and home cook.
