Serves 4 | Prep time: 10 minutes | Cook time: 10 minutes
Ingredients:
For the Bang Bang Sauce:
- 3 tbsp mayonnaise
- 1 tbsp greek yogurt
- 1 tbsp sweet chilli sauce
- 1 tbsp Sriracha hot sauce
For the Crumbed Prawns:
- 32 medium/large, raw prawns
- 1 cup of panko bread crumbs
- 1 tbsp olive oil
- Salt and pepper
- 2 eggs
- 1 cup of plain flour
To serve: Finely sliced scallion
Method:
1. Mix all the sauce ingredients together and set aside.
2. Mix together the panko and olive oil and place them in a large, shallow bowl. Season mixture with salt and pepper. Beat eggs and add 1 tbsp water to the mix and place in a shallow bowl. Put the flour in a third bowl.
3. Dip the prawns in the flour, followed by the egg mix, and then coat each side in the panko.
4. Spray air fryer basket with a little oil. Place prawns side by side on the air fryer basket. 5. Cook in the air fryer at 180°C for 10 minutes. (No need to turn the prawns as the air fryer circulates hot air from the bottom as well)
6. Place on a serving platter and drizzle Bang Bang sauce over the top, or put on the side for dipping.
Notes: As an alternative, you can accompany Bang Bang prawns with rice and steamed green vegetables, or you can simply enjoy it on its own as a starter or party food snack.
