Minced meat, salsa, black beans and tortillas are combined together with a generous touch of taco seasoning to create this ultimate dinner.

Here’s the step-by-step process of making this beef burrito skillet. Start by browning the minced meat. If you’re after a healthy recipe, make sure to choose a lean version of meat. Baked beans is a quintessential ingredient of Mexican burritos. Apart from baked beans, you’ll also need salsa, a generous sprinkle of taco seasoning and plenty of cheese.
Cook this for a few minutes before adding in cut tortillas or cooked rice. I like to top this burrito skillet with plenty of chopped avocados, tomatoes and coriander (cilantro) leaves.

Beef Burrito Recipe:
Preparation time: 15 mins

Serves: 4
Ingredients:
- 1 kg minced beef
- 300g salsa
- 400g canned black beans, drained and rinsed
- 3 tablespoons taco seasoning
- 4 tortillas cut into strips or 1 cup cooked rice
- 1/4 cup shredded cheese (I used parmesan)
- Chopped avocados and tomatoes, to garnish
- Chopped coriander (cilantro) leaves, to garnish
Instructions:
- Heat a skillet or large frying pan over medium heat. Add minced meat. Cook, stirring occasionally, for 7-8 minutes or until browned. Drain excess oil.
- Add salsa, black beans and taco seasoning. Pour in 1/2 cup water. Cook, stirring occasionally, for 4-5 minutes or until thickened.
- Add tortillas or cooked rice. Add grated cheese. Cook, covered, for one minute.
- Top with chopped avocados and tomatoes. Garnish with coriander (cilantro) leaves.
