Keep your canapes and appetizers hot during your next party with these lovely platters from French cookware powerhouse Emile Henry. It is such a clever idea, really – because one of the classic problems hosts have is being able to serve and keep hot dishes warm at a party. I tend to steer away from that at my own dinner parties for this very reason, but now I have the perfect solution. These ceramic trays retain the heat underneath the food, keeping them fresh and hot for guests.
The platters are long and elegant, perfect for passing around at a party, and there is a discreet handle on one end that allows you to easily hold the platter. Being oven safe (as well as microwave safe), you can actually cook your appetisers right on the trays and bring them straight from the oven to the table. Emile Henry’s video for pinwheel pastries in 3 variations demonstrates this:
Emile Henry Appetizer Platter Liege Beige 31cm:
I made my own version of the pinwheel pastries, too. For this recipe, I used the Emile Henry Appetizer Platter Liege Beige 31cm, which is a little shorter and slightly wider than the other two platters I have. This platter is perfect for pastries, pies or any food that needs a little more width.
Emile Henry Appetizer Platter Tapenade 42cm:
The 42cm Emile Henry appetizer platter is thinner and longer, making it perfect for beautifully presented canapes to display along the centre. Both sizes of platters are available in either a Tapenade Charcoal, Liege Beige or Carmargue pink.
Here is a formula for some elegant, yet easy wonton cup appetizers:
You’ll need a packet of wonton wrappers (round or square), a mini muffin tin, fillings of choice (see below for ideas), garnishes/dipping sauces to finish
Open the packet of wontons and press each one down inside the well of a mini muffin tin. Lightly brush with oil, then bake at 180C/350F for 10 minutes, or until lightly browned and crispy.
Place about 1 Tbsp of the desired filling within each little wonton cup, then once ready to serve, bake for an additional 10 minutes to heat through.
These are absolutely delicious with just about any filling! And it doesn’t matter the cuisine – wontons are only flour and water so work many other flavours than Asian food.
Here are some filling ideas:
Crab Meat, Cream Cheese and Green Onion
Pork San Choy Bao (see our recipe here)
Artichoke, Spinach and Ricotta
Black Beans and Avocado (add the avo once out of the oven)
Sundried Tomato and Cashew
Stir-fried Cabbage and Mushroom (shown)
Make sure to garnish once out of the oven: a drizzle of hot sauce, a dollop of sour cream or guacamole, chopped herbs, etc.
